Made a reservation a month and a half in advance but after our experience I think this restaurant is overhyped and overpriced. I had high expectations and wished it lived up to his hype. We ordered everything all at once besides the dessert:Eggplant & Zucchini Scapece: this was a light dish with grilled zucchini and eggplant with some ricotta on topBeets salad (the waiter described this as beets with a pistachio vinaigrette): this was just a regular beet salad, there wasn't anything unique but it was good Spicy rigatoni vodka: the flavor was good, but the pasta was getting stuck to our teeth repeatedly. You can easily get better spicy rigatoni pasta elsewhereTiramisu (there's a dessert cart that rolls around the restaurant and you can pick what you want from there): super dry and frankly inedible The warm bread basket that came before the meal was delicious! The Italian cookies that came after we paid for the meal were great too! The service was subpar, we had to keep on flagging our waiter down and it wasn't busy that night. Parking: you can park in the self-parking garage in Cosmo and take the elevator up.

Good quality food and great pasta ! The bread is so delicious the salami top tier, and the pasta was great we had the tortellini, spicy rigatoni vodka, and fettuccini con fungi and it was all good but my favorite was the fettuccini. Do recommend family style since the single portions still leave me wanting more

What I mean by that is that I would definitely put on a nice dress and heels for a dinner here. Carbone is ig worthy for sure! The vibe is overall elegant and classy. It's dimly lit and gives you that romantic vibe. It's incredibly hard to get a reservation here even as a local. Food:The breadbasket, Parmesan reggiano and salami to start is a little prequel into the yummy meal you're about to indulge in. It's probably one of the best breadbasket starters at any Italian restaurant. I ordered the bread basket twice, it's that delicious. Calamari: it is amazing. It's deep fried, wild caught and with their sauce they add on top, it's 10/10. Probably one of the best calamari's I've had. Spicy rigatoni: it's what they're popular for and with good reason, you'll leave wanting more and more. 4/5Tortellini al ragu: it's okay, I'd get another pasta for next time. It wasn't anything wow. 3/5New York strip: cooked to perfection and a nice portion steak. It was the perfect amount of lean and fatty. 10/10Carrot cake: Oh my yum!!!! 11/10The presentation of all the food was up to par with the service and quality of the food. Service:The service was great, I will say the waiter was a little slow at times. There were multiple times the food runners brought food to our table and we didn't order it. I'm not a snob about those things, however, if we are paying $400 plus for a meal I'd expect that quality of attention. The meals are extremely coursed out and our dinner took 2 plus hours. We enjoyed our time. I'd recommend Carbone for a special occasion, date night, celebratory night, etc... It is hard to get a reservation so pre book.

Service was spectacular HANDS DOWN, ambiance was sexy, drinks were good but some of the food was bland. We were highly disappointed, Person #1 had the heavily saturated Ceasar table side salad. I think the question you ask 1st before making a salad is your dressing preferences (light, moderate or heavy). She had it with oyster which were great. Person #2 had spaghetti and meatballs, which I thought was an Italian staple dish & seems as though I stand to be corrected b/c it didn't have much flavor unfortunately. Person #3 had the spicy rigatoni & said it was good even though she kept adding salt & pepper lol...the bread basket were great & popping hot which made us more intrigued of what's to come. I would come back to the nyc location to give it another try maybe Thursday night wasn't a good day.

It took me almost a month and a half to get a reservation so I took it. Even if it had to be on a Tuesday night, I had to find out what everybody loved about this place.We get there right when it open and there was a few minute wait before we were seated, but that's OK. We were taken to the back where there were big red booths with floor to ceiling red curtains, and beautiful chandeliers were all around the room. Almost immediately, we were offered drinks and brought out a huge wheel of Parmesan where they cut off a little piece of cheese for us. Yum! Next, we were brought out the bread basket and this isn't just any old bread basket. There was sesame seed, bread, garlic, bread, and this amazing pizza focaccia, that was to die for. It also came with salami in a cute little flower design and spicy cauliflower and yes it was spicy. It felt like such a fancy place, but the prices weren't bad.For our dinner we decided to order the oysters that weren't on the menu, the table side, Caesar salad, and two orders of the spicy rigatoni with the meatballs that weren't on the menu. Oysters were probably the best ever. The table-sideCaesar salad was amazing so much flavor, so crunchy with fresh homemade croutons he even let us choose whether we want it anchovies and we said no, thank goodness. The spicy rigatoni was a little spicy, but not too bad it was very creamy and just melted in your mouth. Unfortunately, we couldn't finish it all and brought the rest home. There was no way we could get dessert at this point. Since it was our anniversary they brought out the Italian cookies with a candle in it. They were surprisingly moist and taste like marzipan.I would gladly come here again it's a perfect date night restaurant and I love the music they have playing. Everything was top-notch, and the service was right on point I highly recommend this place , if you can get in.

Couldn't get a reservation in New York, so I'm grateful I got one here. I can see why people have mixed reviews about this being overhyped, but I think with the quality of food, ambience, service, this makes it 5 stars. Yes, it's definitely overpriced, but in my opinion it was worth it. Now let's get to my reviews!Cesar salad: made in front of you& ingredients are super fresh. 5/5Carpaccio piemontese: this was super delicious, but wouldn't care to order it again. I say 4/5Eggplant & zucchini scapece: this was delicious! Never knew eggplant could be an ingredient used so wonderfully 5/5. Assorted baked clams: this was pretty good, but I don't need to order it next time. 4/5Spicy rigatoni vodka: loved loved this overhyped dish. The noodles tasted freshly made. 5/5Lobster ravioli: also another one of my favorites! 5/5Veal Parmesan: it was heavy and too cheesy for me. 3/5Lamb chops: I don't even like lamb, but wow! Loved the sauce variations. I mixed them all. 5/5Chocolate/hazelnut: it reminded me of a chocolate Cookie Crisp. Not too sweet & delicious 5/5 Overall, one of my favorite meals. The ambience of the place felt like you were in Italy. Staff were attentive and super helpful in recommending drinks. The bill can be heavy, but definitely try it once.

What a fantastic treat! We were in Vegas for a concert and decided to snag a reservation at Carbone. Make sure to try to get a reservation as early as possible. Our dinner started with a small piece of parmigiano reggiano, which was delicious and our server walked us through the menu. The cocktails were delicious (great espresso martini) and we ordered a Cesar salad, which they make table side, the spicy vodka pasta and then the mushroom pasta. The pastas were slightly too Al dente for my taste, but the otherwise so good. We also got a side of asparagus, which was seasoned with lemony goodness and one meatball to share. Truly a wonderful dining experience and excellent service. Highly recommend and wish there was one closer to Los Angeles!

Beautiful Italian restaurant with so many great options to choose from. From the service to the food it's extraordinary. There's a reason Drake mentions the restaurant in his music more than once. The Spicy Rigatoni and Beef Carpaccio are divine. The pasta has just the right amount of spice and I was pleasantly surprised by how my palate took a liking to the Carpaccio.

Had a great time at Carbone! Be warned that this restaurant is more slow-moving, and you'll be there for quite some time. I didn't realize this going in and we were there for dinner for about 2, 2.5 hours.We had:- caesar salad (this is made tableside!)- spicy rigatoni (my favorite)- angel hair pasta in olive oil- sea bass (this was the worst dish because it was way too salty)Shocked at the HUGE portion of the caesar salad. Pasta and mains portions were definitely more manageable and sadly the sea bass was terrible because it was just a salt bomb. Service is pretty good, ambience is very old Hollywood. Would definitely recommend and return!

Nick is a great bartender! He's attentive and his drinks are delicious. My meal started with bread, sliced meat andcheese. Everything came out really fast. This visit I ordered tortellini with a meatball on the side. Both were delicious. Last time I ordered the spicy rigatoni with a meatball on the side, also a great choice! For dessert I've had the tiramisu and bananas foster. Nick made the bananas foster right by the bar and it was quite the show! They have different dining rooms in the restaurant. The main dining area has red and gold, which gave it a vintage Vegas feel. The bar chairs are super comfortable and you have plenty of space to have dinner there. Overall, the is a great choice for dinner at Aria! Thanks Nick!

Soooo good! From the appetizers, bread, pasta, drinks, everything was amazing. Portions are great for sharing. We ordered the carpaccio, caprese salad, tortellini, lobster ravioli, and spicy vodka rigatoni (I think) and it fed 4 people very well. I will say the wait was a bit longer than we anticipated even with reservations we waited about 45 minutes but besides being rushed we thoroughly enjoyed our experience

The restaurant atmosphere was perfect for date night! Music was on point for dinner. The food was delicious! The best thing was the service! We never needed to ask for anything, servers were filling water before you were empty. Stopping by often asking how the food was! Best date night restaurant in my opinion!

I have been eating at this restaurant forever! The keep it on point with amazing consistency! The service was amazing with our server Bernie! Totally made us feel like we are family I made sure we had the best dishes! Not to mention great conversation when he had time! Love this restaurant will continue to come back over and over again!!!

I couldn't believe we were able to get a reservation but we did. From start to finish this place is decadent. The ambiance, the staff, the service, and the food. It is a true Italian joint. The Parmesan, marinated cauliflower, and spicy salami to start. We had the prosciutto and mozzarella, table side Caesar salad, the spicy rigatoni vodka pasta, and the Dover piccata, and finished with tiramisu. Again be prepared to spend some money and know that it will be worth it!! The icing on the night was Chris and Tony who took excellent care of us, super knowledgeable, and just a ton of fun!!!

There is no doubt the food is always incredible and superb. However, I felt I needed to leave a review today because our server Ramon went above and beyond. He was so friendly, knowledgeable and genuine. Next time we're here, we are asking for him, at least to just say hello! A truly great person!

We came here for our anniversary and although it was not acknowledged at all it was still excellent. The Cesar salad, the vodka pasta, and the chocolate cake were phenomenal! I can't wait to come back and have this again.

I would say if you're going to estimate price per person and are going to order appetizers, mains, and a cocktail you're looking at around $80 per person. However the food quality really is excellent. The ingredients are so fresh and the ambiance and service make this a place you have to try even if it's just once. We ordered a few things. I will say I was not impressed by the salmon it was not as flavorful as I'd hoped but everything else really was great. We ordered a couple of appetizers the Caesar salad and octopus which are both highly recommended. The stars of the show were the Ribeye Diana and the spicy rigatoni. These are two things I would say are a must try. I'm not a hog fan of sauce on steak as I like the beef to speak for itself. But this dish just works. The pasta was also very fresh and the sauce couldn't have been better not too heavy but defiantly pact with flavor. The highlights of the meal forsure. I'm fact they're were so good I didn't even get a photo before I ate them.

We were told that the portion size is going to be small before ordering it but it turned out to be much bigger than I thought.Service 1/5- the service was very interesting. Given we were in Vegas, there aren't much active things to do so I was not very hungry throughout the trip. So I wasn't feeling like ordering a lot. However, our waiter was very pushy. From the very beginning, he was not content about us not ordering drinks. Then he kept telling us that the food we order was not going to be enough- and it turned out to be more than enough. We didn't want dessert and even though we said no to dessert we were asked 3 times. During the whole time we spent at Carbone, our waiter never took "no" as a "no" at once but it took multiple tries. It was honestly quiet frustrating. Even when we were paying at the end, we were staying at Aria and he kept asking if we will charge to the room- which we had already said no and said will pay at the spot. I am not sure why communicating was so difficult. We were done eating so quickly because we were so uncomfortable and pressured. Also this place was not easy to get a reservation but there were many empty seats in the restaurant. If you are looking to eat and drink endlessly, it might not be a bad choice to dine here but if you just want a simple meal, I'd say stay away.
