the steak i had was quite possibly the best ive had since i went to tokyo in 2002. this is a high class restaurant which i would definitely recommend for special occasions etc. its very pricey but worth it. you will feel like yo went to the right place in vegas

Had a great time at Carbone! Be warned that this restaurant is more slow-moving, and you'll be there for quite some time. I didn't realize this going in and we were there for dinner for about 2, 2.5 hours.We had:- caesar salad (this is made tableside!)- spicy rigatoni (my favorite)- angel hair pasta in olive oil- sea bass (this was the worst dish because it was way too salty)Shocked at the HUGE portion of the caesar salad. Pasta and mains portions were definitely more manageable and sadly the sea bass was terrible because it was just a salt bomb. Service is pretty good, ambience is very old Hollywood. Would definitely recommend and return!

The food and service are first class. The restaurant is always full. You need a reservation in advance, sometimes weeks in advance. The ambiance and architecture are great. The music that plays in the background is great, an important part of the experience. We had the veal parmigiana and the spicy vodka rigatoni. Finished it with a slice of tiramisu.

We ordered the carpaccio, caprese salad, tortellini, lobster ravioli, and spicy vodka rigatoni (I think) and it fed 4 people very well. I will say the wait was a bit longer than we anticipated even with reservations we waited about 45 minutes but besides being rushed we thoroughly enjoyed our experience

Nick is a great bartender! He's attentive and his drinks are delicious. My meal started with bread, sliced meat andcheese. Everything came out really fast. This visit I ordered tortellini with a meatball on the side. Both were delicious. Last time I ordered the spicy rigatoni with a meatball on the side, also a great choice! For dessert I've had the tiramisu and bananas foster. Nick made the bananas foster right by the bar and it was quite the show! They have different dining rooms in the restaurant. The main dining area has red and gold, which gave it a vintage Vegas feel. The bar chairs are super comfortable and you have plenty of space to have dinner there. Overall, the is a great choice for dinner at Aria! Thanks Nick!

I couldn't believe we were able to get a reservation but we did. From start to finish this place is decadent. The ambiance, the staff, the service, and the food. It is a true Italian joint. The Parmesan, marinated cauliflower, and spicy salami to start. We had the prosciutto and mozzarella, table side Caesar salad, the spicy rigatoni vodka pasta, and the Dover piccata, and finished with tiramisu. Again be prepared to spend some money and know that it will be worth it!! The icing on the night was Chris and Tony who took excellent care of us, super knowledgeable, and just a ton of fun!!!

A slice of Italy in ARIA
Carbone is delightfully delicious and fun! We had the 2 best servers with so much energy and charm! My husband and I split the Lobster Ravioli as an antipasta. Wow!! So good. The tail cut up in the middle was the best part! Then we shared the Veal Parmesan and it was so crispy, cheesy and perfectly cooked! It was hard to eat because the music was so good and such a throwback that we had to Sing every song! Carbone is now one our favorite restaurants in Vegas!

Great food and service but music was WAY off. The bread service is absolutely to die for him and everything else we had was delicious. I asked if they could change the music from the hard-core rap that did not really go along with the ambience and was told that that was impossible. It just really ruin the whole experience having to listen to that soundtrack. Everything else including service was on point

Probably the best restaurant located in the Aria. Our waiter was nice & knowledgeable and I enjoyed all of our dishes. I’m pretty picky with Italian food, as I got married in Italy and frequently travel there, but for a stateside dish it was quite good. It’s expensive, as to be expected, but at least you feel that your food is good to somewhat backup the price. I’d recommend stopping in if you’re staying at the hotel.
Now part of the Las Vegas dining landscape for seven years Carbone can safely be called an unabashed success, Rich Torrisi. Mario Carbone and Jeff Zalaznick’s homage to Italian-American Restaurants of the mid-20th century still proving a tough reservation thanks to classic Cuisine and tableside showmanship. No doubt a splashy space, the Manhattan original channeled for much of the lavish interior that stretches from Bar to high-backed booths and velvet curtains in the dining room, service is highly polished yet friendly thanks to industry vets like James Muscaglione and bussers that are ubiquitous but unobtrusive. Clearly trying to evoke a bygone era with Rat Pack classics playing a bit too loudly, the bar moreso than elsewhere, it is before menus are even delivered that complimentary bites begin to arrive, the acid-soaked Cauliflower simple yet refreshing while Cured Meat alongside three Breads were all quite delicious – the saucy Focaccia particularly quite addictive. Unrepentant in terms of opulence, hand-painted plates and big chandeliers all part of the show, Appetizers were deferred to the captain who chose Carpaccio Piemontese and Tuna Calabrese instead of a Caesar or Clams, the former riffing on Giuseppe Cipiani’s original with added texture while cubes of spicy Tuna outpaced the quality of all but Sin City’s best Sushi bars. Breaking the menu down into four-courses, though tableside presentations occasionally see things slightly more staggered, Macaroni recommendations predictably include Carbone’s heralded Spicy Rigatoni Vodka though thick double-stranded Gemelli di Rabe with housemade Sausage is actually even better thanks to Greens rendered to the consistency of Pesto. Onward to Secondi, the Pork Chop & Peppers undoubtedly channeling Mario’s time with another Mario at Babbo, guests enticed by the famous fried Veal Chop will be happy to know that the substantial tab is justified by both size and peerless execution while Potatoes Louie take Anna a level up with crackling edges and a fluffy center. Enjoying well priced Prosecco and Barolo with the meal and a double Espresso to finish Dessert at Carbone offers several choices, the Tiramisu and Cheesecake undoubtedly most popular but the Carrot Cake outpacing any other in terms of style and spicing while recently-added Nutella Crunch Cake should please Chocolate lovers before the arrival of complimentary Rainbow Cookies. On my last few visits to Carbone I have been a bit disappointed in the food quality and level of service. I decided to try it one more time, and I found that the food portions are smaller, prices are higher, and service still is lacking for this restaurant. We tried several dishes and all were lacking. I realize that Carbone gets a lot of "press" for their restaurants, and if you want to eat there for that reason, you may as well. However, if you truly want a good Italian dinner at a fair price, there are so many better places to go in Las Vegas. Personally I would go to Sinatra at Encore, or off strip to Pietro's.
Where to begin... Form the start I guess? I loved everything about our dinner on May 15th 2022. From the moment that we walked past the front bar room to our cozy booth in the main dining room, the vibe was already set. Our server, Athena, absolutely crushed our service. From breaking down the menu, helping us map out a game plan, and seeing the menu through our eyes, she is a seasoned professional. They are extremely fortunate to have her. Food: -The breads that they bake in house let us know that we were in for some seriously fresh food to come! Incredible focaccia. -CAESAR ALLA was as close to as perfect a caesar salad that one could ask for. -SPICY RIGATONI VODKA, we only ordered one order for the table to share because we wanted to really explore the menu, but we all agreed that we should have doubled up on the Spicy Rigatoni. Apparently its legendary- now we know! -LOBSTER RAVIOLI was a perfect texture. Each ravioli was so delicate and full, we compared them to Italian Potstickers! Generous and flavorful. -DOVER PICCATA deboned at the table, delicate, flaky, SUPER fresh. Another stunner. -VEAL MARSALA - the absolute best. We never order veal, but a local foodie told me that I must order the Marsala. Wow. This dish changed my entire perception of what veal could tasting like. Perfectly grilled and sliced. This dish should serve as a sole reminder of how a single dish can expand your palate, live with you forever, and every other veal dish that you order for the rest of your life, will never compare to this Veal Marsala. Only order it at Carbone! Yes, we will be back!

We came here for our anniversary and although it was not acknowledged at all it was still excellent. The Cesar salad, the vodka pasta, and the chocolate cake were phenomenal! I can't wait to come back and have this again.

I would say if you're going to estimate price per person and are going to order appetizers, mains, and a cocktail you're looking at around $80 per person. However the food quality really is excellent. The ingredients are so fresh and the ambiance and service make this a place you have to try even if it's just once. We ordered a few things. I will say I was not impressed by the salmon it was not as flavorful as I'd hoped but everything else really was great. We ordered a couple of appetizers the Caesar salad and octopus which are both highly recommended. The stars of the show were the Ribeye Diana and the spicy rigatoni. These are two things I would say are a must try. I'm not a hog fan of sauce on steak as I like the beef to speak for itself. But this dish just works. The pasta was also very fresh and the sauce couldn't have been better not too heavy but defiantly pact with flavor. The highlights of the meal forsure. I'm fact they're were so good I didn't even get a photo before I ate them.

We were told that the portion size is going to be small before ordering it but it turned out to be much bigger than I thought.Service 1/5- the service was very interesting. Given we were in Vegas, there aren't much active things to do so I was not very hungry throughout the trip. So I wasn't feeling like ordering a lot. However, our waiter was very pushy. From the very beginning, he was not content about us not ordering drinks. Then he kept telling us that the food we order was not going to be enough- and it turned out to be more than enough. We didn't want dessert and even though we said no to dessert we were asked 3 times. During the whole time we spent at Carbone, our waiter never took "no" as a "no" at once but it took multiple tries. It was honestly quiet frustrating. Even when we were paying at the end, we were staying at Aria and he kept asking if we will charge to the room- which we had already said no and said will pay at the spot. I am not sure why communicating was so difficult. We were done eating so quickly because we were so uncomfortable and pressured. Also this place was not easy to get a reservation but there were many empty seats in the restaurant. If you are looking to eat and drink endlessly, it might not be a bad choice to dine here but if you just want a simple meal, I'd say stay away.

My husband and I were on our mini honeymoon this week and after discovering there was a carbone here I was very excited because I've always wanted to try the one in New York and come for the famous spicy vodka pasta. We made reservations and came tonight for dinner on our last night. The ambiance is beautiful, feels like old Italy but also classy New York. We had a super cute little private booth that felt very romantic. The bread service and cheese and salami was delicious. The service was also great however they definitely give you the vibe that you feel pressured to order more. It felt a little uncomfortable because they're pretty pushy about it saying things like your food is gonna take a while to come out, you don't want any starters or a salad? And reminding you it's meant to be in courses. We truly felt pressured to add a side to our dinner because they seemed kind of annoyed when we were only gonna order two things, as we would anywhere else. It's not even about the fact that it's expensive, it's just the simple facts that for two people we don't need appetizers, salads, entrees and sides. I get full of bread. Aside from that though they are very nice and made our experience being on our honeymoon feel special as they congratulated us and checked on us often. And the fact they come and cut the rack of lamb in front of you then serve it was also pretty cool. The food:The lamb chops- these were market price and when we got our bill my husband was shocked they were $95 because he said they were not worth that at all. They were good but nothing amazing. They come with 3 sauces but other than that very simple. The spicy vodka pasta- I didn't taste even the slightest bit of spice. It was very tomatoey and honestly not really in a good way. And the pasta was too al dente in my opinion. Some of it was just plain hard. But the creaminess of it was good. The potato's cooked in duck fat were the start of the meal honestly. For my birthday and our honeymoon they brought us out these little cake things and that was sweet. The food was average, we ate it. Mostly because in my husbands family they don't waste food so that's now a trait I've picked up too and we're leaving tomorrow so we weren't gonna bother taking left overs but over all the portions are small and the food is average, and it's not worth the overpriced menu. the ambiance is cool and the service is a well oiled machine other than the pushiness of ordering more food and boosting your tab. It was not worth the hype I've been hearing about for years but aside from the food it was a cute romantic evening we were wanting so it wasn't all bad.

It will cost you a pretty penny but worth the investment. Service was top notch, ambiance hip yet not over the top, really busy, and food outstanding. We had our server help us order and she made excellent suggestions. I would definitely return when I can save a few dollars to dine there again. Only critique is that they could just turn the music down a tad. It's pretty up beat with the reataurant full and the tunes just made it a bit hard to socialize and hear. In summary a top notch Vegas dining experience.

. that's why the 2 stars but what is with the music? 50's oldies? So random. Anyway, our server was super pushy. We'd been there maybe 10 minutes, barely got our drink order and she tells us "you need to put your order in now because we have a lot of big parties tonight". I replied and let her know we weren't ready. She tells us again "ok but if you don't order now it's going to take a while".. why is a restaurant booking more large parties at the same time than they can handle?? Moving on.. we ordered apps for the table. The server practically insisted we order 2 of everything which we refused and thank God we did because it would have been way too much. When we ordered entrees family style, again she insisted we get two of everything which would have been a ridiculous amount of food. The octopus was rubbery, could barely cut it. We had to ask for plates to eat off of, and then ask that they please clear the dirty plates we were literally stacking for them. We had to ask multiple times for drink refills and utensils. My husbands chair was kicked multiple times by wait staff with carts. Our server was super knowledgeable about the food, I'll give her that.. and we are not super worried about spending money but when when someone orders items that show on the menu as "MP" you should probably let them know if that steak is $250! Yes that's right, the porterhouse is $250 and the server didn't tell us.. found out when we got the bill, and on top of that they overcooked it. We ordered it medium, it was definitely well done. And they served it to us sliced so they definitely knew and served it anyway. We barely ate any of it because of the overcook. In the end they took it off the bill after we complained so that's good. Our bill for 6 people was $1800. We were shocked. We felt the server was simply trying to turn our table faster and sell us way more than needed. For practically $300 per person I'd expect to be wow'd and it wasn't even close. I left feeling like I just wasted my money. We will not be back.

This restaurant looks like you rolled out of the 50's , beautiful place and everyone that works here is fantastic .Make sure you book reservations way ahead of your trip if you want to go ... ok now to the food there was 6 of us and the server recommended doing family style which consisted of picking out a bunch of different dishes and sharing which was smart cause the prices on the food are on the spendy side . We got the vodka pasta , spaghetti, veal parmesan, Caesar salad , ribeye, ravioli. Honestly I've had better Italian food but it wasent terrible . Also if you order wine make sure you look at the prices if not you can order bottles of wine that are really expensive

I had texted that with traffic and one guest had an injured foot...we were running late. The hostesses explained that our table had been given away. When we asked her to help us find a solution, she said: "if you help me out I can make something work for you."One person from our party offered her some cash. When she saw the money she stated " it will take more than that". That's when I asked for the manager. The manager graciously helped find a solution unaware of the requested bribe.Not a great way to start what turned out to be a really nice and very delicious dinnerCarbone: Is this really the first impression you want your employees to make for your patrons?

Excellent High-Class Italian Restaurant
The food here is excellent and served in nice, large portions. It's authentic and absolutely delicious. It's also a bit pricey, but you get what you pay for and the servers are happy to do splits if you ask. They have a nice wine selection as well. There are two rooms - one is quiet and intimate and the other is vibrant and loud (with the bar).
My only complaint is that the pretentious little girl who seated us was dripping in bad attitude. Even though we had reservations and were dressed appropriately, it was clear that she loathed seating us (which made no sense) and then made an audible huff when we didn't want to accept our initial booth table assignment - preferring a table instead. I'm surprised that a high-class restaurant like this would keep somebody like her on staff. There was no visible manager present for a complaint.
I feel these other reviews must be paid for or from people who have never had better than mediocre Italian food. It was hard to get a reservation but we called back a couple times and managed to sneak in around 8pm, only to witness several people tip the hostess $20 for a table and everyone else who planned ahead got bumped and were noticeably frustrated having to wait 30-60 minutes past their reservation. Whatever, it's Vegas. While the dress is business casual, there were several highly intoxicated fools dressed like bums who had no issue being seated while their trashy dates screeched like drunk sluts with random fluids down their front sides. This should have been a big red flag!Moving on to the food, we were very excited and the dishes "look" amazing. The starters they bring you were "fine" but not up to par with the quality of nearby restaurants like Il Mulino. We tried several options like the Veal Parm, a tortellini special with black truffles, those duck fat potatoes, several pasta dishes, salads, sides, etc. The waiter sold us on everything, and was very good at his job. However, it was all bland and overall not well balanced. The veal parm especially was probably the worst I have ever had, and I think they charged around $80 for it; a bad cut of meat, way too much breading, and no real flavor. Then it hit me, this place is not about the food, it's about the experience. You're paying for the location in Vegas, feeling special to get a reservation, the highly trained staff, the loud music & atmosphere, etc. Everything except the food! By dessert time the waiter caught on and knew we were on to his ruse, so he was honest and said all the desserts were bad except maybe the cheesecake. I'm trying to think of a way to compare the food in a way that most people can relate. Have you every been to a nationwide chain like Carabbas, Maggianos, or Macaroni Grill? Yeah, those are all MUCH better than Carbone at a fraction of the price and level of frustration. If you're party is highly intoxicated and you want a great dining experience regardless of how the food tastes, then come here. Mario Carbone needs to get his restaurant in order.

Carbone is a beautiful restaurant with fantastic service.
Started with complimentary bread service that included salami, fresh Parmesan, pickled cauliflower & of course multi options of bread. So good! Next was the Gorgonzola salad. Terrible! Overdressed pasty mess with absolutely no acid. We asked for balsamic & it made it 100% better. We were told the chef didn't think the vinegar went with the salad. Huh??? Spicy rigatoni was good but wasn't spicy at all for me. More tomato foward with a hint of guanciale flavor & tiny bit of spice. Cherry ribs were very tasty however they were on the tough side & were hard to pull away from the bone. Huge portion though! Overall the experience was good & I would return for another try.

Every dish was amazing but the experience was phenomenal. Our party felt like we were the only ones there.... the servers were incredibly attentive. Advice: share a myriad of dishes. Don't omit the Diane steak- perfection!
Does it match the hype? Not quite in my opinion. The most popular dish, the spicy rigatoni, was fine but fell short of wow-ing me. I actually enjoyed the chicken massimo, shrimp su'modo, and the lobster ravioli more than the rigatoni. The menu is pricey as the ambience and service matches the "fine dining" feel but also be prepared for "fine dining" portion sizes. If you're up a couple bucks from the casino, this could be worth trying.

Down the street from where I live, Luigi, at this local Italian delicatessen serves up reliable Italian food starting from the Italian salads, pasta dishes and even some truffle infused items. He also has cans of caviar I can buy. This joint, an excellent establishment with snooty Maitre'd and good looking waiters who could appear as a thespians at one of the Vegas shows, make this place seem quite special and trendy. We ordered a lot of food that included Prosciutto, Foie Gras, Gorgonzola salad, Tortellini with truffles on top, caviar with mozzarella cheese, veal, porterhouse steak and a couple desert dishes. Basically enough to feed a small curling team. First dish - Parmesan Raggiano comes out to feed the appetite in the beginning. Good stuff but Luigi has that too.Gorgonzola salad was the second dish. Too oily. Luigi's is better.Prosciutto with truffle on top - Good. Luigi has the regular prosciutto but no truffle. it's very thin. Not sure that is good or bad.Foie gras. Acceptable. nothing special. Luigi has it too.Tortellini with truffles.--- Again Luigi has the same thing. You can ask for truffles. same as his. Caviar with mozzarella cheese - below average. At Luigi's you just buy the caviar. You know what you are getting. Good caviar separates once in your mouth or when you roll them out on bread. Also they need to start popping and start to let out egg juice when you bite. The not so good ones just become a mush in your mouth with no fish taste. At this joint, it was the latter.Porterhouse steak - below average. Granted it's hard to get the temps right due to the cut. But really nothing special here. Luigi doesn't have this but I'm not typically looking for it at an Italian place.Deserts were acceptable. Service - slow. Painfully slow. Budget a 3 hour ordeal just to eat here. Note to self - a longer meal does not equal nice meal.Wine selection is good - but Vegas over priced. Brunello selection is surprisingly thin. Sommelier's suggestions were OK but Luigi (an Italian man in his late 50's) could have done better.Cost - Aprox. $300 per person. At Luigi's (even assuming you got the top quality caviar, cheese, truffles yourself), you'd be crazy to spend $150 per person.

The bad: 1) What's the point of reservations when you don't honour the reservation time? We were seated 15min after our reservation time and had to stand outside the restaurant with other waiting guests. Some told us they waited over 25min2) The lady at the welcome desk was very unprofessional. She had an argument with other guests right in front of everybody. She was clearly agitated and, as a result rude to everyone else 3) Some waiters in vegas just love to sell, sell, sell. It's quite annoying. We already knew what we wanted to eat and told our waiter. My boyfriend and I planned our trip to Vegas for several months and after hearing so many rave reviews Carbone was a "must do" for both of us. We had a reservation for 7pm on a Tuesday, but we were shown to our table around 7:15. It took a while for our server to stop by and we immediately told him we had a show at another hotel at 9:30. He told us that wouldn't be a problem and he would time the courses out so we would have a nice meal. While the server and the assistant were both very nice they seemed to be either short staffed or not paying attention. Service was very slow. We waited 20 minutes for our drink order and then another 10 after we asked our server to check on them. The food courses had similar wait times. Our main entree finally came out around 8:50. As it was dropped off we asked for the check. We took a few bites and immediately had to ask to have it wrapped up. We did not have time to wait to speak with a manager as we needed to get to a show on the other end of the strip. Today I called Carbone and asked to speak with a manager about our experience. After waiting on hold for about 10 minutes I spoke with Nikki who listened to my feedback, but ultimately told me she could not refund any part of the bill or offer any other solution. Nikki stated a typical meal takes 2 hours which wouldn't have been an issue if we were seated and served on time. A Great First Time at Carbone
Our party of six had a business meeting at this restaurant. The service was exceptional and made sure they came over to the table only when we were ready for the next course. The seafood appetizers were top notch, the entrees of seafood and steaks were perfect and the desert was a great end to the evening. Would highly recommend.

They play too many marketing games, they make 20 people stand out from after their reservation and you walk in and 1/2 the tables are empty. The food is average at best. I have been to the miami and Las Vegas restaurants and I cannot believe how the hype can create a business not the food. Lets see how long it can last?

$85 corkage fee?? The linguini vongole had way too much jalepeño / red pepper flakes and about 6 small clams. The spicy rigatoni was just ok but way overrated given all the hype. The waiter also seemed annoyed that we only ordered 4 items off the menu and was visibly bothered that we brought our own bottle wine. One and done and won't be returning.
