We loved the pastas and burrata cheese especially. Cod and steak were good too. Very helpful server who gave us great advices about the food. We got to see beautiful sunset from our table too.

We had dined here in October and were enthusiastic to return. The experience could not have been more different. The evening started off as expected with a pre-fix two courses that were excellent and attention from our waiter and the wine delivered as requested. And then nothing... for forty five minutes. Not a visit from any of the waitstaff let alone our waiter. We figured something had gone wrong in the kitchen but no one bothered with us to confirm. The couple at the next table was seated about 30 minutes after us and was hovered over as they tried to select a champagne (it appeared that they returned a few selections). I believe they had a special arrangement, maybe celebrities or frequent diners, however they had a steady stream of waitstaff, management and the chef himself. We were finally served our third course and it was horrible. The halibut which was so wonderful when we had it before was floating in an unpalatable concoction and the fish was not poached properly. The tenderloin was average at best and not served with the black trumpet accompaniment. Dessert was worse... the chocolate decadence was dry and crusty and not the marvelous texture and superb flavor we remembered. We still did not receive a visit from our waiter and asked support staff to please send him over. The manager (had to ask her who she was) showed up and asked what we wanted and to asked us to describe what our dissatisfaction with the meal entailed. She did not offer any remedy and left. We waited another fifteen minutes for our waiter who did not show up. We had been insulted enough. We went to the hostess and asked for our $750.00 bill. We paid it and were told how they had comped a $24.00 glass of bourbon. It was never about the money. This was a special occasion evening. We had ordered flowers for our table. For one hour it was lovely. For ninety minutes it was disrespectful and at best... a culinary nightmare.

I recently dined at Caruso, the Michelin-starred restaurant nestled in the Rosewood Miramar Beach, enticed by promises of a culinary journey amid the stunning Pacific views. The ambiance, service, and most of the dining experience lived up to the lofty expectations, earning my applause. The al fresco seating over the sand and the stylish interior indeed provided a glamorous backdrop for an evening on the American Riviera. My server, with an A+ attitude and attention to detail, elevated the overall experience. However, the hiccup arose when we requested a simple adjustment to my girlfriend's halibut dish - a dairy-free sauce. While our server eventually convinced the chef to accommodate this request, it left a lingering disappointment. For a restaurant of this caliber, where a prix fixe dinner menu costs $165 per person, one might expect more flexibility in meeting dietary preferences. In the grand scheme, it may seem trivial, but when investing in a five-star dining experience, the expectation is perfection in every detail. I applaud the server's efforts in resolving the issue, but the fact that it occurred in the first place left a blemish on what could have been an impeccable evening. In conclusion, Caruso is undeniably a culinary gem, but my experience prompts me to give it three stars. It is a reminder that even in the world of Michelin stars, there's always room for improvement in the pursuit of perfection.

I am so happy to have been able to experience dinner at Caruso's. From the ambiance, beautiful views, top-notch service, and delicacies that are an explosion of flavor in your mouth.... my girlfriends and I left full and could not stop talking about the whole evening! Compliments to the chef and the whole team for such an incredible experience.

We had a really good time. While we waited for our table we got a drink at the bar and I had the best margarita I have ever had! It's called the causos margarita and it's made with clase azul it's simply amazing! The service was great both in the bar area and main dining area. The food was fantastic and the ambience was great! I can def see how this place has 1 Michelin star! It's fantastic! Highly Recommend: Carusos Margarita Mascot 2014 Wine Chefs Welcome Bites Hand Pulled Burrata Bread Service Cacio E Pepe (This is amazing!) Hibachi Grilled Tenderloin We will def be back at Carusos next time we are in SB for dinner!

Detail to attention. Friendly non-pretentious staff (which is refreshing for a Michelin star restaurant). Mixologists at the bar are superb and wine pairing list perfect for each course. Sommelier did excellent job explaining each wine, its background and why it's being paired with each dish. Overall a wonderful experience.

Was staying at the Rosewood Miramar for a work trip and popped in for dinner one night with some coworker. There were 5 of us total and service was impeccable. Our meal was 4 courses with a couple added on treats like chef welcome bites, and additional dessert bites, I chose to have burrata for my first course. Creamy and delectable with a fall flare and flavor pallet. Next was the cacio y Pepe and I added black truffles which is truly the only way to experience that dish. It was truly devine. Next I did the tenderloin and veggies. The meat was cooked fine, but I wasn't a fan of the sauce... but it was still great. Finished with the honeycomb dessert... amazing! If you are in the area and wanting a Michelin Italian experience with a gorgeous view of the pacific, stop here. Be sure to make a reservation with a view and go around sunset.

I'm a guest at the rosewood Miramar. Came to Caruso's after dinner for a drink around 730pm. An employee said we can sit down. After about 5-10 minutes another employee comes and says they already did last call. I get it if you guys are closed but update your hours to reflect that. Love the Miramar but would never go back to Caruso's

We had one of the best dining experiences ever at Caruso's! The restaurant is located at the beautiful Rosewood Miramar Hotel and has a full ocean view! Unfortunately, we had a reservation after the sunset so next time we will definitely go earlier so we can take full advantage of the incredible views. There is covered patio seating with heating lamps so it is very cozy and comfortable.We selected the Chef's Tasting Menu with 8 courses at $275pp which I think is a much better choice than the Prix Fixe Dinner menu with 4 courses at $165pp because you get so much more variety with your meal. Although they indicated that the quantity of the food is the same, I prefer to try all the various creations that the chef has to offer.Our server Dan and his team are superb! We truly had a great time conversing with staff. Furthermore, the restaurant manager and Chef Massimo also came out to greet us and they were super friendly and down-to-earth! We were very impressed by the warm welcome and believe that their service and hospitality is why Caruso's was awarded a Michelin star. The tasting menu was exquisite! We were astounded by how delicious each course was and the quality of the seafood. For example, we loved the uni dish as well as the lobster. The sauces that accompanied each dish were so flavorful. The pasta also had a unique burst of flavor inside and the amuse bouche was also delectable. We were even impressed by their house-made bread and butter. We also ordered the soufflé as a supplement which was perfect. The desserts such as 'Our bees went to Ojai' and the house made chocolates were amazing as well. Chef Massimo is a culinary genius. We had an incredible time at Caruso's and believe that they are on their way to more Michelin stars!

Amazing, amazing, amazing!! And did I mention that it was amazing? It turned out to be such a pleasant evening. We arrived just before sunset, and it is spectacular even after 23 years in California. The restaurant is very classy in every respect. The staff was formal and as such expectedly a little stiff and nonetheless very personable and attentive. And even after sunset, the ambience remained just wonderful.But most importantly, the food was spectacular. Eight course tasting menu with tiny little bites each time. We asked the staff to go slow and hence had absolutely no trouble with the total amount of food. Everything was visually beautifully arranged and had a broad and beautiful contrast of different flavors. Only the pasta could be a little bit less al dente and a little bit less salty for our taste, but the rest of was spotless. Well deserved Michelin star! And definitely a place to come back for more.

Truly beautiful experience from service, ambiance, and care of food & plating. We did the four course as a group of three - highly recommend coming in a group and sharing. Portions are fair and delightful, with an included amuse bouche to start, bread service featuring caviar, and dessert bites at the end. While every course was great (fresh seafood and spectacular Wagyu) the pasta course shines. We added truffles and it's a hefty portion that continues to elevate the meal. Wine pairing was thoughtful and enhanced the experience but did not steal the show, as it should, and the sommelier was approachable, hospitable, and luckily not stuffy. Service was attentive but did not crowd and touched the table just enough. We were also happy to have the Chef deliver a course and you could see how he is also part of the team, happy to see his vision on the floor and not just a figure head. Also pre ordered a cake (three day notice minimum) for a birthday and the buttermilk frosting was spectacular. Get as much as you can, take the suggestions from staff, and enjoy the seamless evening - as a local we will be back

Lovely experience! We came for dinner so it was already dark but we got to sit on the patio with the warm heater and the sound of the waves. We took the simple 4-course menu and found it delicious! The highlights were the uni gnocchi, the duck and the chocolate mousse but every dish was unique. A great dining experience and reasonably priced. Thank you!

We went here on Valentine's day and were presented with a very cute and intimate experience. The Rosewood hotel, which houses this restaurant, is huge and the walk over was peaceful (and very cold). There's valet parking but it's free if you get your ticket validated by a server.For the food, we both ordered the chef's tasting menu which started off at $275. We opted out of the wine pairing, which was surprisingly almost as much as the tasting menu itself, and got 4 cocktails which did the trick for much cheaper.In addition to the base menu, there were supplemental courses you could also order. The first being a caviar dish which was an incredibly expensive add-on that was more than the base menu... We did not get this one and for how expensive the tasting menu was, I would have expected the base menu to have included some kind of main caviar dish. We ordered the supplemental pasta course, which was just okay. The interior of the pasta tasted good but nothing to warrant an extra $45. The last supplemental course was a cheese souffle and we were struggling to finish this one due to its strange oily feel and taste. The inside also wasn't that soft for a souffle.Going back to the original tasting menu, it was actually pretty good for the most part. There were a lot of courses and we left pretty full. My favorite courses were the bluefin ahi tartare and the A5 tenderloin. The tartare was nicely salted and meshed perfectly with the lemon and almond granita on top. The tenderloin was juicy and buttery as expected.Now for dessert, the small bites were great. Some were sweet chocolatey bites but a certain coconut pastry was exceptional with it's fruity interior. However, along with the disappointing supplemental souffle course preceding the dessert, there was also another pre-dessert course: the kumquat tartare. We can honestly say this was one of the worst dishes we've tasted and we almost could not finish it even with how small it was. My girlfriend thinks it was not cooked all the way through due to its bitter taste.Overall, it was a good Valentine's day experience. The decor and location was excellent and we felt very comfortable dining here. Most of the food was great overall, but for its high price tag, we expected a bit more quality. The supplemental courses were also both not worth the additional price and not that good.

After seeing all the pictures, and reading the reviews, I had high expectations. Unfortunately, I left very unimpressed. To start, our service was very bad. We had to ask for our waiter on at least 3 different occasions, and we saw other people complaining as well. We did the 4 course pre fixe, but before that came out we had Amuse-bouche of really dry flavorless bites that felt like they had been sitting out for a while. Then our first courses were the burrata and yellowtail crudo. They both lacked salt, but the yellowtail with tangerines just tasted like eating candy on fish and wasn't pleasant. It needed some spice to break up all the sweetness. Next, was the risotto with prawns & gnocchetti with uni. My risotto was under done and had a whipped sheep ricotta that had the worst texture - it ruined the entire dish. The gnocchetti also had an odd tang to it. Our third courses were the halibut and the duck. These were actually the only two savory dishes that were done really well. The duck was cooked to perfection, but it was drowning in a sweet orange sauce. When you cook meat that perfectly you need only a hint of sauce. To finish it off we had desserts which were also done well. Overall this meal was not worth its price tag. The service especially sucked. I enjoyed my meal at the Honor Bar down the road way better.

The hotel and restaurant was beautiful! Service, food, and drinks were amazing! We got the 4 course tasting menu which was perfect for my partner and I. The food came out perfect timing each course. Their bread, olive oil, and caviar butter was my favorite! I'm a sucker for housemade bread and butter! We ordered a bottle of brut and split an espresso martini. They even split our martini, which was nice! All their dishes were very elegant. I loved the bowl they used for the soup. I usually dont have patience for fine dining but Carusos was worth it. The only thing i can say i didn't really like was how confusing it was to find the restaurant. The GPS directed us BEHIND the hotel, there was a sign that said "CARUSOS" but there was no valet or parking. We asked a couple workers we found and they directed us to the front of the hotel. When we got to the front of the hotel, there was no direction on how to actually get to the restaurant, we had to ask the front desk, and they directed us to the other side of the hotel. We will definitely be back to enjoy the menu instead of the tasting menu.

The location is truly beautiful. Listening to the ocean while sitting outside under the heat lamps is my kind of experience. We had two waiters taking care of us, not sure if that is normal but it was lovely. They even took care to escort us to the restroom. The food itself was so delicious. Everything was so unique and tasty. I don't even like oysters but enjoyed the oyster appetizer. I got the burrata salad, risotto, and the steak. The only thing I didn't absolutely love, but still thought was good, was the desert. I forget what it is called now, but it tasted like butterscotch, it was good, but just not my favorite. My husband love his tiramisu ball. Overall it was a truly amazing night and would happily go back! So grateful for the beautiful and exquisite experience.

We went for my birthday dinner the other night, and had a less than great experience. The restaurant was dead so the vibe was nothing to speak of and then the food was also average at best. We did not enjoy the octopus, the lobster course was overcooked, the artichoke was hard to even find in the bowl, the halibut was one piece of fish and barely and turnip purée and to top it all off the desserts were nothing special. Having said it was my birthday, we expected, at least to have a candle or something special for the celebration and the restaurant didn't do anything to acknowledge the big event other than a simple "happy birthday when we sat down." We are big foodies and have been to some of the best restaurants in NYC, DC and Miami, and we definitely would not return. It's certainly not worth the $700 price tag for two.

Went here for my 21st & I was very excited to try the tasting menu! The location is extremely pretty and definitely picturesque. Be sure to come around sunset to take a few pictures before dining here! Service 5/5The waiter was extremely welcoming and accommodating!! I really liked that he was honest about each dish and gave good recommendations on what to order. Starters A5 Beef TarTare 4/5 Delicious, but a little unappetizing since the meat was not as red as I would like it to be. I would avoid eating the crisps that come with it unless you want to break a tooth. Halibut Carpaccio 5/5Definitely a must if you enjoy sashimi! It was very light & fresh! Pasta Carbonara 3/5I personally would not order the carbonara since I've had better. It was personally too salty for me and the guanciale was chewy. Cacio e Pepe 5/5However, I would recommend the cacio e pepe since it was pretty simple and authentic! MainsPan Roasted Hokkaido Scallops 5/5The cook on the scallops were perfect: silky and sweet. I did not really care for the peperonta since it was too sweet. Dry-Aged Liberty Duck 3/5I was extremely disappointed by the cook on the duck. Although it was medium rare (more on the medium side), it was tough to eat since the cook was uneven. Thankfully, the peach mostrada and nectarine are were delicious! Channel Islands White Sea Bass 3/5This was also a huge disappointment. I've had many sea bass in my life & this was the worse one yet. It was so overcooked that I mistook it for a tougher fish. DessertRJC'S Favorite 3/5I personally did not enjoy this dessert since it was not sweet at all. However, if you like something that is rich and not sweet then I would recommend! My French Friend Made Tiramisu 4/5This was okay for tiramisu. I think it's creative, but it didn't really wow me. I would've preferred a traditional tiramisu. Overall, I do think the service & the scenery are way beyond my expectations. However, the food was not the best I've had especially for a set course dinner starting at $145. I was unhappy that our mains needed to be sent back due to the lack of quality. I did, however, appreciate our waiter for bringing us a different dish that we really enjoyed!!

Everything from the beach views and location, hospitality, handcrafted drinks and of course the amazing food, is to die for! This is mine and my husband's favorite restaurant and every time somehow seems better than the time before. We will continue coming back here as long as we can! Our compliments to the chef for his superb dishes!
