Probably the best ramen you will find in Spain! The soft shell crab bao and shiitake bao were very nice. I ordered hakata ramen. The broth was milky in consistency and very hearty. Ajutsuke ramen egg was well-marinated with a runny, jammy yolk. The ramen bowl came with two very thick pieces of pork belly chashu, which were perfectly seared and flavorful. The dessert was mochi donut with citrus ice cream on top. The mochi donut was crisp on the outside, soft inside and chewy. Highly recommend! I definitely want to try the tantanmen (based on Chinese dan dan mian) next time if I have the chance.

. was seated right away by the manager and happy she spoke English. Not a lot of people speak English in Madrid from my observation. As always service was quick and portions were enough for four. Flavors of the bao's were definitely uberlicous and the ramen was fantastic. You just needed to be there.

I would be a regular if I lived in Madrid, which sadly I don't :( Their baos are ON POINT, but they do change! So don't get too attached to what you see on yelp as they may have different ones when you go.Pan fried pig ear bao - the reason for 5 star review. Literally not a more perfect bao was made. Soft and fluffy bao, with flavorful and crispy pig ear that is stuffed up nice and fat (no skimping here folks!). They seem expensive at 9 euro, but they're actually quite a large size so worth it!Ramen hiyashi - 4/5. dry soupless ramen. Noodles and flavor were all on point. Loved all the toppings except I do think the cashews were too copious and also didn't blend as well with the bowl since it was quite sweet, like candied cashews. Got the soju sour cocktail which was fantastic.

This is a hot little place so be sure to have a reservation if you want a chance of dining here ( while there are a few seats at the bar which a solo diner of couple might be able to snag, we saw several small groups get turned away). Menu consists of about 5-6 bao and 3 types of ramen. On to ordering... we should have stuck with the bao which were fantastic. instead, we ordered a bao each and then each a bowl of ramen and that was just waaay too much food. The chicken bao was the standout of the meal- highly recommend that one. Ramen was good but frankly I was so full from the bao that couldn't really enjoy it. Overall, a good meal. Name of the restaurant is intriguing to me. Is it a reference to the traditional Madrid outfits? Or the word in Spanish that means superior to others? So curious....

Fun AtmosphereWhen you are ready for a break from tapas, this is the place to go. The bao buns are delicious and the spicy ramen (which two of us shared) was very good, although not very spicy. We also had the eggplant which was very good. This is an adorable restaurant with a young crowd and friendly and helpful servers. It was a fun evening. Must reserve in advance.

One of my favorite ramen spots in all of Spain (and my mom's favorite of all time). My mom and I had a phenomenal experience here. The broth runs on the thick and flavorful side and noodles are done right. Staff was friendly. Would highly recommend this restaurant!

Pro: Appointment system, good thick base for the ramen, staff that can actually speak proper English to the tourist. Con: Gyoza mix for isn't even, long waitWe stayed down the alley, saw this place by chance and decided to drop in for a bite. We got turned away at 8:30 PM, but got a reservation for 9:45PM. The place was super busy, finally got seated at 10:10PM. The co-owner is from OC, so it's smooth sailing for questions and details.The buns have a lot of meat, a lot more then the usual Taiwanese buns, it's great value for the price. Pork gyoza's peanut was not properly mixed, thus some gyoza had too heavy of peanut crunch and favor while some didn't have any affect.The ramen, some of the best we ever had in comparison in Japan, Taiwan, and the States. The broth is cooked in small batch, drained right before serving, you can see all the action at the glass window. Menu - was told it was from an ex NYC Mamafuku chef's personal choice, the other co-owner of the restaurant. I would highly recommend this place if you are in Madrid.

This ramen is PHENOM and the restaurant is cute and intimate and cozy!!We found Chuka because we were sick of tapas and wanted a change, but there were no reservations left for the night. We arrived ~15 minutes before opening and there were already a handful of guests waiting for Chuka to open to. They only have a ~8 seats for walk ins and someone pushed in front of our party of 4, so we decided just to wait for the entire first round of guests to finish so we could still eat here. They have a glass window between the entry and the kitchen so we were able to watch the chefs prep all the food which was fun.It took about an hour and a half for the bar seating to turn, but it was worth it! You get a little snack as a starter, and then our group chose the gyoza (amazing), cauliflower (veggies are so hard to find in spain but these are so flavorful too! I think we were the only people to get it the entire time we were there but I loved it), and I got the tonkotsu ramen. The broth is SO rich in flavor but light so you don't feel gross and greasy, and the noodles are phenom. It comes with a really big portion of chashu so I didn't end up finishing it, but it was great too. Chuka is well deserving of their michelin accolade and well worth a meal if you have time to try it! Coming from California we have high ramen standards, but this was amazing.

The mushroom bao and fried chicken bao were terrific and the special bao, pastrami, was to die for !! Buns were light and not chewy and the fried chicken was the perfect crunchiness. We also had the cauliflower, generous portion, also yummy. Last but not least, the ramen (the non traditional one). It was also excellent!Owner and staff were very friendly and made us feel welcome even as non-natives. We were lucky to get a seat without reservations so I strongly suggest calling in advance. Can't recommend enough !

WOW. So I came here while visiting Madrid since my sister was studying abroad here. She said that this was the best ramen that she ever had. My family and I were impressed. We made reservations as my sister said that the wait can get long as the restaurant is a bit small. For food, we got the tiger shrimp and fried chicken bao buns for an appetizer and they did not disappoint. Literally I think it was one of the best bao buns I've ever had. Definitely go for the fried chicken ones, the piece of meat is huge! I got the Shoyu Ramen and the pork that came in it was amazing, it was crispy yet soft at the same time and the broth was delicious. I got to try the miso ramen; but did not think the broth was as good as the Shoyu one.ALL IN ALL, I agreed with my sister, definitely one of the best ramen places I've been to. It is however a bit pricey - but definitely worth the price and quality.

The restaurante seems to only focus on their meat - no joke the pork was really good. Yet other than that, everything is s**t. The soup was fat and salty, ruining the whole bowl of ramen. Last but not least this might be the most expensive ramen I'd ever tried in my life - $17 USD LMFAO I'm crying bye

We had two of the Baos, which were delicious and very big (recommend to share one or two of them) and my significant other and I both got the traditional Tokyo Ramen. The only reason this was not rated a 5/5 is I would have preferred the ramen have a little more spice to it (or at least have the option of a spicy one), but all in all the service was excellent, atmosphere great and food very good! We would certainly come back.

The hype is real-- my only regret is that I came alone so that I couldn't try more food. I arrived right when they were open and snagged a seat at the bar, but it seems like reservations are everything. Had a bao bun and the tonkotsyu -- huge portions and flavor! Staff was attentive, vibe was great

I love the concept and the staff!We walked into this place late into the night when their kitchen was closing but the owner welcomed us at the bar and wow did we have FOMO on the food. It looked amazing and the staff was very friendly (english speaking and knowledgable about area). It is very quaint and traditional style which we loved.I would highly recommend this place to any travelers in madrid and make sure you try the food because we showed up too late but the drinks were perfect!
