How many lawyers does it take to remove hundreds of street-food hawker stalls and move them into a white-stone British (pre Japanese Invasion) Colonial Building, changing the food culture of an entire Southeast Asian City State? Well, I'm not sure how many but I'll bet it was a butt-load. That said, the new digs almost actually work. Welcome to Singapore's Chinatown, the only Chinatown in the world that is completely housed inside of a building. And this is just one of the dozens of huge buildings in Singapore housing the indoor versions of the once thriving, crazy, and chaotic street-food vendors that lined Singapore's "Night Market" alleyways, filling them with barking food-hawkers selling their many Asian dishes from rustic and smoking cooking stands. One of these family owned stands was "Fatty Ox, Hong Kong Kitchen," a Cantonese/Fujian smoked Meat and Chinese BBQ Food Stall, now located on the 2nd floor of an ornate early 20th century British Colonial Warehouse, along side dozens of other food stall hawkers selling their own special edible wares.Come here for Soy Sauce Chicken, Stewed Brisket, and Roast Duck. But my two favorite dishes here are the slow cooked beef tendon and Chinese Braised Ox Tails. Delicious. Just remember: the food stalls are on the second floor. Otherwise you'll end up trapped in a bunch of Chinese ginseng stores and jewelry shops.
