Fried to Absolute Perfection.
Fried carrot cake or Chai Tao Kuay. A dish that looks so simple yet so hard to perfect. We've seen so many variations at our local food centres. Some really good ones but more often than not, they tend to disappoint. Fu Ming isn't one of them. What makes a good fried carrot cake?1) the "cake". The radish cake used shouldn't be too firm. It needs to be softy nearly melt it your mouth yet firm enough to ensure it doesn't break into tiny little pieces when frying. Most importantly, it needs to have that natural sweetness that exudes from the radish. 2) the egg the cake ration. Yes, more often than not, this tends to be overlooked. Like a good spaghetti meatball, if the "cake" was the meatball than the eggs are definitely the tomato sauce. Too much and it'll mask the cake, too little and it doesn't bund the flavours together. 3) the flavour. For the black carrot cake, it has to be the black sauce. It needs to be savory yet sweet, yet it can't be overly sweet or the flavour of the cake will be masked. For the white, it needs to have the right amount of salt , allowing the cake's natural sweetness to shine and at the same time, not being too salty and make the fish too salty while being fried with the Chai Poh (salted radish). See? Looks simple yet so difficult to perfect. I'm happy to say that Fu Ming hit all the right notes with heir carrot cake.Once you get pass the slightly grumpy demeanor of the lady boss, you'll be greeted with one amazing plate for fried carrot cake. Although I did feel that the white version was slightly on the salty side, the black version was perfect! The cake was soft, the sweetness of the radish came through, the amount of egg was perfect, the sauce was sweet yet savory and it had that fragrant wok smell or wok essence (wok hei). The whole dish really well constructed and everything fell in place deliciously. $2.00 would be perfect as a sample size but be warned, it might not be enough. $3.00 would be the regular size while $4.00 is perfect for sharing. Overall, Fu Ming's carrot cakes are beautiful balanced and with them opening till midnight (some website do state 01.00am), it makes for a perfect supper option.
