Ichiran is my favorite ramen chain from Japan and the standard carried pretty well across the locations. This location is fully individual cube seating, which I guess works out for the fast-pace NYC; also right by the Penn Station, so good as a transit meal ;)My favorite part of Ichiran is the ability to choose flavor- broth saltiness level, grease level, garlic/scallions or not, spice level, noodle tenderness, etc. Tonkatsu broth is usually too salty for me so able to make it less that is perfect.One point off is on the noodle texture, I ordered firm, but it came a bit doughy and mushy... When ordered firm in Japan, it was not undercooked (with the doughy sticky texture), but just al dente.However, even for NYC price this is overcharging for the quality and material - $22 for a base bowl with 2 thin slices of pork, no egg, no veggies, and $7 extra for topping set (one egg, 2 thin pieces of add on chashu, 2 nori, a few mushrooms and scallions), $9.5 for the small matcha pudding and $6 for a cup of green tea!
