At the end of the day this restaurant is a Korean-American's take on Japanese ramen. David Chang has always said it's an American ramen and doesn't want to try to make Japanese ramen because he has too much respect for it.Nomz: Started off with the pork belly buns, which are fantastic. They are some of the best pork belly buns in the city in my opinion. After those, I had the smoked pork ramen. The pork within it was on the thicker end but the ramen flavor was lacking overall. The pork wasn't super flavorful and the broth was missing umami. I would have loved to just add salt to get any sort of flavor in it whatsoever. Service: We had one of the first reservations for lunch so not very busy. Waiter was good, refilled water promptly. Ambiance: Bigger than the east village location, more on the modern side but still minimalistic. The immediate bar area has like a diner feel with the seating area and bar stool style. The end of it works for a group of 3-4 because it wraps around. Nope or Dope: Nope, the ramen is not for me but the pork belly buns might be worth a visit back, we'll see!
