I will start off with the petty comments: I cannot comprehend why a restaurant of this standard recommend patrons take public transport or park at a public car park 10 minutes walk away with no protection from the elements. We happened to dine on an evening that was drizzling and windy. Our wait person was quite tired, I believe: wrong menu given to start with (main course listed being venison instead of wagyu), one of us asked for a glass of hot water and order was completely forgotten, cutlery was placed in haste not bothering to line them upright. Wine pairing was half half as first two courses were not enhanced by the wines provided. However, my long holding view on Shaw & Smith preferring the whites over the reds was completely smashed by the final red pairing. While every dish being served by kitchen staff was impressive, it did not add value to the food served but rather stroke one's ego. First two courses were impressive, especially the appetisers. However, none of the following courses match the same excitement we had. The oyster and wagyu was confusing as we could not work out how they complement each other. I am hoping that our next visit would see different courses presenting more excitement (unlike one of our world renowned degustation restaurant in Sydney which uses the same menu for years). Finally, to be fair to other wait staff, they did a brilliant job.
