What was once an exuberant celebration of all things vegetable has blossomed into an exquisitely polished, talented display of them. All dishes, whether subtle, chili peppered, or variations between the two consist of multiple, balanced flavors, well-executed. Chef Amanda Cohen and her talented young team have obviously thought and tasted and tested. Beets that do not blast a one note sugariness, but display a breadth of flavors; fried butternut squash prepared to make you forget its fried chicken inspiration, accompanied by a rich gravy made of kabocha squash, served alongside a creamy, mild yet flavorful slaw made from spaghetti squash--it goes on and it's all a mind-boggling taste delight. And it's all dirt cheap.
