A truly amazing restaurant that served up potentially one of the best meals I've ever had in a setting which is spectacular.As we were staying at the Cavalieri we decided to treat ourselves to a little fine dining pleasure. We made reservations several months prior to arriving and ensured ourselves a terrace table with a great view of the Vatican and the rest of Rome.The hostess graciously encouraged us to take a few pictures prior to seating us and then the table captain presented us with the menus. We were then asked if we wanted an apperitivo and we all decided on some Prosecco.We next selected an nice Campanian sparkling mineral water for the table and shortly after the amazing bread cart arrived. We sampled everything they offered with my personal favorites being the house made grissini which had a hint of rosemary and the crusty Tuscan bread. They were all served with some amazing olive oil and multiple types of sea salt.Once we enjoyed the bread a trio of amuse bouches arrived with all of us agreeing the 'bruschetta', which was a creative inversion of the dish, where the 'bread' was a firm tomato flavored puree that you could hold like the traditional offering. For my primi I opted for the foie gras which was served in an amalgam of ways, partly frozen and almost like a custard while the middle was liquefied and decadent. Our new friend operating the bread cart offered some tender brioche for my dish was I enthusiastically accepted.My secondi was the fried zucchini blossom with caviar. If it sounds rich and indulgent, it was. The blossom was artfully presented with a creamy filling of saffron consume and topped with a heaping serving of caviar. The contrast between the fried blossom and the creamy caviar and consume was perfect. I paired this was an excellent white wine from Trentino who's minerality and acidity worked well with the dish.My entrée was the perfectly prepared sous vide lamb which came with a rich reduction, goat cheese and broccoli. The lamb was melt in your mouth tender and cooked to a perfect medium rare plus. The depth of the reduction only added to the dishes flavor and complexity. This was paired with a wonderful Tuscan red recommended by our waiter.For my dessert I chose the cheese tasting which was six amazing cheeses that were nearly impossible to select from the dozens offered so I described the flavor profiles I enjoyed to our waiter and he did not disappoint in his selections. I asked for a vin santo to accompany this and the sommelier provided one that matched the cheese perfectly. We then had a series of dessert amuse bouches come out including the amazing 'tower' of jellies and candies which seemed to never end. The final treat was a miniature chocolate ice cream bar on a stick with an exquisite berry compote filling. We were all stuffed by this point but not one remained regardless of our condition. Our waitstaff were all very friendly and engaging and we shared some mutual stories about both Rome and New York City and the food we liked in both. La Pergola did not disappoint at all and all three Michelin Stars were on full display throughout our memorable meal. A culinary experience I will fondly remember.
