Review #500I've always liked to save a special review for a milestone review number. La Pergola is definitely a very special restaurant worthy of such a milestone. Normally for fine dining, I would just write about the food in each course, the ingredients, the technique involved (if I understand it), the balance of flavors, etc.... but I'm not going to. Or not much anyway. La Pergola is the complete fine dining restaurant experience. Starting with a movie set like aerial view of Rome from the balcony. If you time your dinner right, you can enjoy sunset on Rome from here. The impeccable service of fine dining that is a lost art form is celebrated here. Dropped from restaurants all over to make the casual fine dining dress code of just don't wear shorts and flip flops customers feel hip and trendy, it's good to know there is still a special place for refinement while dining. That how your meal is served, which utensil is correct, the measured placement of each item, is as crucial to the dining experience as the food itself. Somehow La Pergola accomplished this without feeling stuffy. There was a genuine gratitude coming from each employee that you have decided to share in this experience with them. Because at the end of the day, we are all going to sit back with a slice of pizza and a beer way more often than partaking in this dining ritual. But for one day and one meal.....it's fun, and made the idea of packing a suit jacket in my case just for this experience so worth it.I can say each course was outstanding. We did the 10 course tasting menu, which must have gone on for 2.5 to 3 hours maybe? Some of the ingredients were lost in translation as was their preparation, although we did attempt to ask. We reached a point, where it didn't matter anymore, and we were dining on the experience. Several amuse bouche appeared in beautiful presentations before our first course of foie gras with apple and chestnuts. Each plate was unique in size and design to enhance the appearance of the dish, like choosing a frame around a great work of art.I've been so lucky to experience many amazing chefs in my life. I felt that every dish was in line with the highest of craft that I have experienced, however there was still one dish that completely stood out as unique. A lettuce leaf done in a pressure cooker enhanced with chicken flavor. It was stunningly beautiful, with a perfect texture like an al dente pasta, and rich in flavor.The main courses kept coming out, 8 of them in total before the cheese cart appeared and we trusted our server to give us a nice selection from mild to strongest. Then a couple of desert courses. At this point we were completely stuffed and out came a multi tiered treasure chest of fine chocolates, macaroons, and other goodies. I've had this presentation at a few restaurants before, but never where every sweet snack was so excellent that it was a sin to waste any of them. Ok now...we're beyond full. Thinking the bill was coming next.....a thick frozen gelato bar covered in chocolate appears on a popsicle stick. Are they taking bets in the back if we will keep eating, if they keep feeding us? I looked back at the kitchen door to expect to see the chefs peering out.....saying, I can't believe the fat Americans ate another course!!!!At this point there was a pause and I was praying the bill would arrive, because one more wafer thin mint and I'm seriously concerned a Monty Python sketch is about to happen in real life. Thanks to La Pergola for giving us such a memorable evening. You are truly worthy of your 3 Michelin star reputation.Note: This is of course a think very far ahead restaurant. I made reservations 5 months in advance. Not sure you need to be that far ahead, but I'd say as soon as you know you are going to Rome...book it if expensive Michelin Star Restaurants are your thing.
