An egg away from greatness.Sunday 3/19/23 ~12:24pm, $21.40 after tip5 min wait until seated (bar only) - 11 min 30 sec order-to-bowl~~~~~~~~~ Signature Pork Ramen ~~~~~~~~~Final Score: 8.07/10(7.7/10) Noodles: Upper-tier wavy egg-noodles. Relatively thick with a good bite & mouth-feel. The noodles were cooked well - they did their job. Just a notch below the ramen shops that make their noodles FRESH, but make no mistake, these stand up to the "20-hr" pork broth.(8.2/10) Broth: Some of the most pork-forward broth I've ever had. Their "20hr" broth definitely puts the pork front-and-center. Every ramen shop offers a standard Tonkotsu pork-base, but this broth is distinct. Great seasoning and depth, rich and creamy without relying heavily on additional oils. Very good.(6.2/10) Egg:The weakest part of an otherwise exceptional bowl. The soft-boiled egg was cooked well, with very little yolk curdling. The dark marinade color reached deep into the egg-white. Unfortunately, the flavor did not match. The sweet/satly soy flavor was there, but was lost next to the both an chashu. Still above average.(9.7/10) Meat: THE BEST CHASHU IN A BOWL. Incredible. A thickly-cut piece of deeply-marinaded pork belly. The texture of the pork was tender, without turning into mush.The flavor of the pork was on another level - likely due to an additional coating of the thick soy-marinade sauce. Every bite was a flavor punch. The final cherry on top was the crispy, crunchy, texture seared on the outside edge of the pork belly. Thats the first time I'v ever had a piece of chashu like that. This piece of meat is worth the price of the bowl alone. I was skeptical when I saw an extra piece of chashu was $7.... But after tasting it, I understand!(8.6./0) Misc Toppings: Standard nori, garlic, and bamboo shoot toppings. The bamboo shoots were deeply marinated - a sign of extra care and prep. The topping choices were standard, but didn't distract from the bowl at all. Do a little, but do it right. Good.(8.5/10) Other: I was skeptical of this previously-Michelin-starred bowl, but I understand the hype. Though was put into each component. Distinct and interesting broth, upper tier noodles, and god-level chashu puts Ramenwell in the top-tier of SF ramen shops.*Weighted Scoring Formula: Noodles (25%), Broth (25%), Egg (15%), Meat (15%), Misc Top. (10%), Other (10%)Other:Bathrooms: Single gender-neutral bathroom. Clean, but dark and weird interior.Parking: Tough Mission street-parking. Bearable on a Sunday.Service: Understaffed. Nice, but each interaction took extra time.
