Tuome is definitely one of the most unassuming one-stars I've ever been to. The picture in the guidebook looks pretty ordinary, and the street which the restaurant is located is even less conspicuous... Decided to go on a whim. When we got to the intersection, I looked in the direction of the restaurant and there was no one on the road. Really doubted if the restaurant was located here. It was early workday evening so we got seated without a reservation. Two of us basically ordered everything we wanted; the menu was quite small, I guess I could get through it in two visits. A complimentary appetizer came first. I knew the chef has a Chinese tie, but scallion pancakes, what a surprise! It's nothing special, oily and fragrant, crispy and slightly chewy, like any other scallion pancake, yet it feels so home-coming. The cottage cheese spread on the side...meh...not a good match. Octopus, deep fried and served with potato foam and pork XO sauce. The XO sauce was amazing, it tastes like XO but you know it's not your average XO at all Deviled egg, restaurant's signature, simply a traditional deviled egg plus a twist of deep-fried egg white that gives an extra layer of crispness. The finishing touch, the fragrant red chili oil, was genius!! Its aroma instantly brings me back to China Squab, soy sauce and shiso. Heavy on sweetness, seasoned as if was braised. Deboned already, very tender and juicy. The sweetness of the soy sauce was well tempered by the freshness of shiso... as for the potato foam...didn't make sense at all.... For main courses we ordered the signature snow crab noodles and the wagyu beef. The noodle was yet the biggest surprise. Simply replacing the lobster with crab meat and the E-fu Noodles with pasta from the famous Cantonese dish Lobster with Cheese and E-fu Noodles in Superior Soup, you get the dish! I didn't have the chance to have Lobster with Cheese when I went to California, so yes I had emotional points for this dish. To be fair, the crab somewhat overcooked, but anyways, with the cheese sauce, I could have eaten two bowls of that noodle! The beef was less attractive to me by then. It was still delicious of course. Nonetheless I didn't quite understand the dish. The whole concept and technique of it was very western, not in keeping with the rest of the menu; and foam/potato was on its third appearance by now, so naturally one gets bored with it. At $75 per person, it was fair enough(good value for one michelin star? maybe). Considering the dishes are slightly ill-conceived, i would say it's probably a Michelin plate in Shanghai at best, but in New York, where there isn't even an upscale Chinese restaurant, as a rare Chinese/Western fusion, fine I'll take it. It's kinda one of those restaurants that if it wasn't this close, there definitely wouldn't be a second time (but for the noodle, hell yeah!)
