Yes it's insanely hard to get in. Yes you might have to call every day and pray for a cancellation. But you'll be glad you did. I've never been to a restaurant where it seems like everyone loves working there and truly takes pride in their job. The waiters and sommeliers and everyone that works here have that vibe. And duh, you have to try the spicy rigatoni. It's a given.

This place is famous for a reason! I was determined to get a dinner reservation and was lucky enough to snag one during our NY stay. The service is beyond exceptional, almost overwhelming. I felt like all of the staff was attentive and friendly. Loved that Ricky our server was Italian, made it feel so authentic. The pasta and ravioli was amazing. The only thing I did not like was that the seating we so close together since the restaurant is small and quaint. Luckily the reservation was a right at opening time and we asked to move to an edge seat and staff were accommodating. A beautiful place for a romantic dinner if you're lucky to get a reservation!

If you manage to get a reservation at Carbone, you HAVE to get the Oysters Posillipo. A very underrated appetizer. The spicy rigatoni was okay - nothing too special, but our waiter recommended to order with the special of the day which was mixed meat meatballs, which made it better. Also, skip the tiramisu and get the lemon cheesecake. As someone who's not a fan of lemon, the cheesecake exceeded my expectations. Moist with a crisp base.

Sadly, what was once an amazing concept - upscale mid-century American-Italian - is now a caricature, by design.Reservations are essentially impossible unless you have a connect (and ALL prime time tables are reserved for connects - you CANNOT get an 8pm table here, ever). The rest are jammed with tourists and out-of-towners who are ok taking an 11pm reservation for the pleasure of making Jeff Zalaznick more wealthy.That all might be ok if the food hadn't seriously gone downhill the past few years and the prices continued to rise. Now the only good thing about this place is the fact that they kept the old Rocco's sign.

The experience of dining at carbone is fun, but honestly not worth the price. I've had so much good Italian food over the years and I didn't understand what the fuss was about at this establishment. Glad I experienced it, but wouldn't go out of my way to go back again.

Always phenomenal but honestly the carbone miami is better. Everything is fresh, service is spectacular. Food is either really big hit or miss (that's why its getting a 4 star). Otherwise, its amazing and if you can snag up a reservation at carbone I suggest you take it. You'll leave full & satisfied

Amazing evening and great experience with lively vibe, staff was super friendly and attentive. My favorite was the lobster ravioli, the spicy rigatoni and tortellini ragu was so delicious! And have to get Mario's meatballs! Had the clams appetizers and Gibson to start, such a great meal!

We both got the spicy rigatoni vodka pasta-- the sauce was spicy and flavorful which was good but otherwise a pretty plain pasta. Not sure if the person taking our order was the manager or a server (he was dressed in a suit), but he was very brusque and made us feel rushed. He seemed annoyed since we didn't order drinks or dessert. I noticed that he made a point to ask the couple next to us, who arrived at the same time, how their meal was going and then completely ignored our table. The other waitstaff and the hostess were very nice though. Food- 3/5Service -3/5
I was lucky enough to score a reservation here, and it absolutely did not disappoint. I knew this was going to be my kind of place the moment a waiter waltzed up and gave me a totally unsolicited giant hunk of cheese. Which was delicious. The complimentary basket of bread (especially the foccacia with red sauce) was also excellent. From that moment on, everything from the wine (get the Oregon Pinot Noir - it's fantastic) on to the dessert was epic. I started with the carpaccio pimentaro - which was the best carpaccio I've ever had. I progressed to the spicy vodka rigatoni which also exceeded even my very high expectations (it's their signature dish) and truly was spicy. I had the chocolate hazelnut cake for dessert which was fantastic as well. The whole time, I was serenaded with 50s tunes from classic folks like Dion while also enjoying some of the best people watching New York has to offer. (To non-native New Yorkers, you have to do it on the DL while pretending to be totally disinterested.) The restaurant is intimate, authentically and lovingly decorated, and has outstanding service. Get to work scoring yourself a reservation here 30 days in advance because it is completely worth it.

Great Italian food that I can honestly say lived up to the hype. We ordered 3 things: the Veal Parm, Baked Clams, and the Spicy Rigatoni Vodka. Highly recommend the Veal Parm and Baked Clams. Surprisingly, though it's like the most popular item on the menu, I'd say you could skip on the Spicy Rigatoni Vodka. The pasta was perfectly al dente and the sauce super creamy but not overly heavy, but I just felt it was lacking a bit of flavor (maybe could've had a bit more tomato paste). The Veal Parm, on the other hand, is CHEF'S KISS!! Perfectly cheesy goodness on top of tender and breaded veal cuts. And the Baked Clams omg...please get that also. It's a mix/variety of different toppings on the clams but they're all amazing. My favorite was probably the pesto one. The starter they serve you is by far the best bread starter I've ever had at an Italian (or any American) restaurant. The bread already starts of as a super loaded garlic bread on its own, and then it comes with fresh mozzarella and salami on the side for pairing. Ugh amazing.

For starters its a pain to get a reservation and eating outside (although beautifully decorated) is not worth the money you pay for the food. I've had a lot of great food and don't mind paying extra if its spectacular, but I feel like it wasn't particularly memorable.

If you are lucky (and patient) enough to get a reservation, it is definitely worth a visit!The bread basket and the accompanying pickled cauliflower, salami, and parmesan cheese were amazing. I got the baked clam trio, and while the clam with the uni on top was amazing, the other two were just ok. I also got the caesar salad which was delicious and their giant croutons are to die for. Would choose the salad over the clam trio in my opinion!On to the main, I got the signature spicy vodka rigatoni and meatballs on the side. I loved the spicy vodka sauce, but thought the the pasta itself was slightly overcooked for my preference. Felt like it needed a minute less of cook time to have that perfect al dente texture. The meatball was so flavorful and juicy, and would definitely recommend. For dessert I got the tiramisu. While it was delicious, and it tasted like it may have had some orange liqueur-esque flavor, it wasn't my favorite. I personally love the super wet, pudding like tiramisu and less the "cake style" tiramisu. The service was amazing and the waiters were super nice and accommodating. While I do recommend coming here at least once, it felt a little overhyped.

They were mostly average. The truffle tortellini was $75 and tasted like it was made for $7.50. The rest of the food was just ok. Bill was $315 and I expected way more from a place like this. There are other Italian places in Vegas that are more well deserving of your funds.

I was thrilled when I was able get a reservation at the infamous Carbone for my birthday. If you've ever tired to make a reservation here than you know how difficult it can be. As soon as I walked into the establishment the first thing I noticed was the cozy atmosphere and I felt as though I was in the 70's. My eyes gravitated towards the small bar that was located a little further into the restaurant. I was seated within minutes and was taken into their second room. One thing I can say is that Carbone is very generous and offers many appetizers on the house. As soon as my party and I sat down plates of garlic bread, salami, pickled cabbage and cheese was placed in front of us. Everyone from the hostess, to the waiters and the bus boys were super friendly and took amazing care of my guests and I. Now lets talk about the food, some of the appetizers that I ordered were the assorted baked clams which came with a total of 9 but were prepared in a variety of ways. I also ordered the beef Carpaccio Peimontese which was thinly sliced raw beef, this was very light and tasty. I also ordered their classic Cesar salad which was prepared fresh and right in front of me. Now onto the main courses, I had to try the spicy rigatoni vodka pasta. It definitely lived up to the hype, it was spicy, creamy and packed with great flavor. I also ordered the veal parmesan which was breaded and topped with fresh mozzarella and marinara sauce. Carbone made my birthday extremely special, all the waiters came out and sang happy birthday. For dessert I ordered fresh strawberries with home made whipped cream, the lemon cheese cake and the carrot cake that came with a scoop of vanilla ice cream. For those of you who haven't heard, Carbone is one of the hardest reservations to get in NYC. Reservations open up on Resy 30 days in advance at 10 am. Carbone is an Italian restaurant filled with years and years of history and known as an attraction for celebrity A-listers. They also have one Michelin Star for their high-quality food. Once we arrived, we were seated in the back dining room which was not too crowded and perfect for an intimate lunch. We were then introduced to our waitress who was so amazing and thorough with her personal recommendations. As we were deciding on what to order, we received complimentary garlic bread, mozzarella, and salami. These alone were just mind-blowing - extremely fresh and tasty. For appetizers, we chose to order the baked clams. Our waitress informed us that the baked clams were assorted - casino, oreganata, and fantasia with sea urchin. The baked clams were delicious and very fresh as well. For entrees, I had to order the spicy rigatoni vodka since it is a Carbone staple. My boyfriend ordered the lobster ravioli which is a more nontraditional item on their menu. The spicy rigatoni vodka was amazing to say the least! Even though it looks like a basic vodka pasta, it was unlike any other that I've had. The sauce was so creamy and not too spicy, which I really appreciated. I would definitely come back here just for this. I had a taste of the lobster ravioli and honestly, it was not that great. The lobster was fishy tasting and it was very overpowering when paired with the squid ink pasta. Since the portions were smaller since it was lunch time, we definitely had some space for dessert. We tried the lemon cheesecake and it was such a hit! Usually, I don't like pastries with lemon tart, but paired with this cheesecake, it was soo good. I had such a great experience at Carbone and I would definitely recommend checking it out if you are able to get a reservation. one of the hardest restaurants to get a reservations at in NYCgiven the hype and anticipation around this meal, there's only question there to ask. was worth the hype? in short, yes. from the moment you step in the restaurant you are transported. the staff was excellent and the food was exquisite. the assorted baked clams are a great place to start before diving into the main attraction - the pasta. the spicy rigatoni vodka was a no brainer but the tortellini al ragu proved to be a worthy competitor in richness and flavour. we finished our lunch with a new york style lemon cheesecake and coffee. definitely the best lunch i've ever if you're able to get a reservation, i would highly encourage you to go (or else ill go in your place )side note: if you're not trying to break the bank @parm is under the @majorfoodgroup alongside with carbone where you can try the the twin version of the spicy rigatoni vodka

Doesn't look like much when you pass but when you walk in it's aesthetically beautiful and the details have it that Italian feel. Joey was our server he was attentive , friendly and accommodating ! Thank you Joey .I wish I took pictures of the inside . Definitely a place that is a must visit.The only thing I can say regarding the food was the soup was salty but nothing eater can't fix ! Joey as I said is accommodating, listened to our feed back & it was a nice surprise he took that item off our order. In the end my experience was wonderful!I will be coming back when I visit.

Loved Carbone in NYC! We got reservations for a weeknight to celebrate a special occasion. The service was great and we loved the food. So many great vegetarian items such as minestrone soup, eggplant & zucchini appetizer, and the spicy rigatoni vodka. The Nutella tiramisu was also delish. Highly recommend and maybe you will see a celebrity!

I had been dying to eat here for years and finally managed it pre-pandemic at 11:30 AM one day before a matinee. The complimentary bread service was a nice touch (you get a complimentary cookie with coffee, too) and the spicy rigatoni seemed better than the version you can get at Parm. The service was excellent, though it was early and the restaurant was not full. Finished the meal with a tiramisu that was only alright, though the cookie on top was the best part. It was an expensive meal, but I had a lot of food and enjoyed myself; it felt well worth the experience. Ambiance is very old school Hollywood Italian, which was fun, too. Worth a trip at least once.

It was a full outdoor built area that was heated and well-decorated, it felt like you were actually indoor and part of the extension of the restaurant so even though it was cold outside, the dining ambiance wasn't impacted by the cold weather. They had decor in the tents and even had music playing!I was really excited about the food. Got the clams for appetizers, the ribs for entree and of course the famous vodka rigatoni.I liked the bread service - 3 different types of bread nicely warmed with sides of salami, cheese, as well as cauliflower. This was a nice touch but it definitely took probably 15-20 minutes from when we first sat to get the bread service.Appetizer: The clams had 3 different sauces and came as sets of 3 - they were okay, the sea urchin one was my favorite but some of them were a little fishy!Entree: The wait from appetizer to entree though took almost a whole hour so we sat there well after 11pm just waiting for our food. When we got the food, I wasn't even hungry anymore because it just took so long :(The ribs were well done, the flavor was great but the side salad that was underneath was so heavily covered with vinaigrette and it was so salty I could barely properly eat it on a standalone so that really took away from the dish.The vodka rigatoni was really good. The pasta sauce was so tomatoe-y and so creamy! The texture of the rigatoni was well done. This was a good dish, and deserves to be the signature.Overall, I might get the rigatoni again but the overall experience besides that dish was generally quite disappointing. I do applaud the staff for a great customer-facing service though.

Alexander was one of the best servers I've ever met! He made the entire meal feel like an experience. I love that the mozzarella is homemade and comes out warm in olive oil. Everything was rich in flavor! Don't let the rude hosts push you out the door! It's really hard to get a table but your best bet is going right when they open -it's never too early for pasta!

Appetizer bread is phenomenal. Lobster Ravioli is also very well done. The special (linguini with shaved truffle) was good. Caesar salad is okay. The cake desert was very rich but good.Most importantly, the ambiance and the level of service is the best part. Candidly the wait/hassle to get a reservation probably isn't worth the effort but if you're able to get a table it's a no brainer.

We have been here a few times over the years and it’s always been solid. Atmosphere, drinks, music all work with a old school vibe. Service is also excellent without attitude. This time we had the prime rib which was awesome and the tortellini which was good. However the mozzarella was a bit chewy and the carrot cake was too ginger. Overall not sure I would rush back for the hassle of the reservation and the cost but if you haven’t been you have to try it once.

An amazing place to eat. Great vibe. Carmine our server is hell of a guy. The way he describes each dish is quite something. The delicate flavours were all bang on. From their Oysters to Ribye to Branzino were out of this world. One of the best food I have had.

My partner and I were really excited for our meal here, given the tsunami of hype and how difficult it is to get a table. The prices mean it's something of a special occasion if you aren't high earners. We left incredibly disappointed for a number of reasons. In short, mediocre food and rude service. If you've had good pasta before and are looking for something of that standard, this is not the place for you. More:
1. Ignoring the price, the food was a mixture of good and average. Taking the price into account, it was dreadful. I suspect Carbone has a superficial notion of what "fancy" pasta should look like, but lacks the expertise or incentives to really execute it. Granted, the bread+mozzarella and vodka rigatoni were great, if not exactly the hardest dishes to execute, but we found our other starter, the eggplant and zucchini scapece, really acidic with little balance. Why so much vinegar?! The worst was the $42 lobster ravioli. The ravioli parcels had a texture recalling the experience of eating liquorice, and the lobster filling was fishy and similarly chewy. The sauce was reasonably good but that's because butter tastes nice.
2. On mentioning (really, really politely!) that the ravioli was disappointing, our waiter ignored the feedback, walked back into the kitchen and got our bill. We were both really surprised. I don't know if this is their general standard of service or if it's because we're a young couple, but either way I think restaurants ought to treat polite customers respectfully.
3. There were tons of free tables. We think the restaurant is falsely advertising how heavily booked it is in order to inflate the hype bubble that is clearly maintaining its popularity. It works though - we bought it!
Absolutely avoid. This is a restaurant riding a wave of reputation that I think it no longer deserves.
