Just when I thought it couldn't get better.
Carbone Miami exceeded all expectations I had coming into it. As you may know, the New York location is the flagship, original Carbone. A bold statement but I truly enjoyed my experience more here than I did in New York City. Given the lax way of life and lifestyle in Florida in general carried over to the experience in the restaurant. We were greeted well and given a table outside. From the get go, our waiter started strong with explaining his way of ordering from the menu and his recommendations, down to the ingredients. From the timing and presentation of the meals, it was phenomenal. The Caesar salad was made with grace and explained very well. Every single waiter there made sure all of our needs were met. Not once did we have to flag down a waiter because it was too busy. Also I found the food to taste better here than in New York. Truly looking forward to my next Carbone visit.

If I could give this joke of an establishment a 0/5 I would.
You would expect a restaurant like this to be professional towards their customers, especially when they made their reservations and had them set in place 30 days in advance. Not to mention, today is my birthday and I was anticipating these plans, especially organizing my day around it. We arrived on time and were asked to wait until the rain cleared out. While the staff was "organzing" and "looking into" our reservation, we were patiently waiting. They were doing absolutely nothing and no one was in communication with us. The manager ensured us that they were looking in the interest of our best "dining experience". There was no experience at all considering that they wouldn't seat us regardless of our wishes to sit outside. There were other customers eating outside, so clearly they were able to provide service. The manager failed to provide any valid reason for not seating us. Their miscommunication caused us to believe we weren't able to sit outside in the period they were "figuring out the weather". A restaurant with this reputation had no right turning us away after our patience and compliance. Thank you for wasting my time and being the most unprofessional restaurant i've ever been to. I've seen better service at McDonalds. Thanks for the birthday wishes Carbone I will never return and am glad to not give this dump any business

Unfortunately, my second experience at Carbone Miami was
Unfortunately, my second experience at Carbone Miami was disappointing. I went on a Saturday night around 6 pm and the restaurant was fairly empty. My friend and I ordered Caesar salad, clams, spicy rigatoni, lobster ravioli, truffle cream corn, and chocolate cake. The lobster ravioli was awful -- the ravioli filling was a bit frozen still. We let the waiter know, but he did not do anything about it. The service was not great, especially compared to my first experience at Carbone Miami (opening week).

Not worth its hype whatsoever.
Amazing service, average food. Complimentary appetizers were phenomenal, especially the bread. Prosciutto and mozzarella was also fabulous. Spicy rigatoni was good but not great. Mushroom fettuccine wasn't even palatable. Average meatballs and cheesecake. Would recommend for experience, but if looking for a restaurant based on only food, go elsewhere.

Everyone already knows pretty much everything there is to be known about Carbone. So, a coupla things:Did I enjoy having to give myself a stroke trying to unlock my phone at lightening speed every time I got a notification from Resy that a table opened up? No.Did we enjoy having to leave the beach at 4 p.m. on a gorgeous early March day so we could make our 5:30 p.m. reservation on a Tuesday because that was the only one we could get? No.Did we enjoy the food? Yes. Except I have to say that the lobster ravioli (while delicious) - the pasta itself was undercooked. Way less than al-dente, so much so that the filling was cool and not the slightest bit warm.Did we enjoy the (fast) pace of the meal and how quickly we were brought the check even though we just got our dessert? No.Did we enjoy the fact that we were charged $20 for water when the waitress only asked "Sparkling or still?" and didn't say there was tap or that the still had a charge? No.Did we get the feeling that we weren't treated as good as those who come here and order all the most expensive shit on the menu? Yes.Would we come back next time we were in Miami? Probably.

I've been to Carbone a few times, and while the food is amazing and the Miami location is beautiful, I've never been seated within 45 minutes of my reservation, can't get a drink at the bar and have left incredibly frustrated, despite everything good that Carbone offers. I would love to see Carbone run a tight ship and turn it around, but so far I've been disappointed with the Miami location.

Very cool place and very friendly staff. Not cheap but then that is be the only way to keep it at their level. While reservations are a must they do have a steady stream of VIP's they need to accomodate reservation-less. I get it! Find the well connected concierges!! Will be back.

I was super excited to try the spicy rigatoni and it was extremely bland. My friend was even disappointed. The staff was great tho, they offered to send it back and get it remade but I'm almost certain it would've still been disgusting. Do not go here unless u wanna waste your time.

I really wanted to like this place so much but it is not good at all. The ribeye was pretty good but everything else was below average to average. So many better options for this price
We enjoyed a late dinner with friends (it was impossible getting an earlier reservation). And really loved the place. After a brief wait, we were taken to a lovely table outside. The staff overall was incredibly friendly and provided excellent guidance on our choices of dishes and wine. As we were waiting for our orders, several small dishes of antipasti arrived to the table, as well as an outstanding of excellent bread. Our wine decision -an Italian Nebbiolo- was a great choice. Our dishes were beyond our already high expectations. We had the lobster ravioli (outstanding), the fettuccini con fungi and 2x the spicy rigatoni vodka (the most popular dish as our server informed). As the portions were quite large, we were I only able to share dessert. Our choice of the chocolate hazelnut cake with ice cream (and a gold leaf detail) was definitely the right one. Finally, a nice courtesy of Italian Rainbow cookies made the end for a superb dining experience. We will definitively go again.

Nothing unique about this place at all.
Everything that hit the table tasted good, but nothing was memorable in any way. This place touts itself as family style but nothing that arrived was larger than what you'd expect from a normally-sized plate at any other Italian restaurant. The meal as a whole was quite overpriced and given the abundance of good restaurants in the city, this place isn't worth your time. Upland was much better; too bad Carbone's took its place.

I had the most heavenly experience at Carbone.
The spicy rigatoni changed my life and the ravioli was superb! Started with the best espresso martini and needed with wine! The cheesecake had a lovely lemon glaze on top. The service was super attentive, answered all the questions, and gave wonderful recommendations.

The food here was delicious, me and my friends were having a great time. Once we ordered our server said it would not be enough food (which was completely outrageous after food started coming out), so he told us we should get bigger portion of the rigatoni to split which we happily inclined thinking he has our best interest at heart. He ended up bringing out four portions of rigatoni for each of us (this is on top of all the other food we ordered). We ended up getting charged 150 total for the rigatoni alone and we were way over stuffed. Although we didn't mention this gross misunderstanding after getting the check it left a very bad taste in our mouths.

Even though we were seated 45 minutes past our reservation, this was such a nice dinner. We appreciated that they don't try to rush you off, which is why we had to wait. The food is so fantastic and authentic; they are so generous with the complementary starters. Even desert was delicious. We were able to sit in the bar at a cute table to begin with a bottle of wine, which made the wait time pass quickly. The only suggestion would be for the hostess to better communicate why we were waiting. Once I asked and understand that others were still dining, and that we could sit for a while, it was fine. We were happy to get in.

As much as I did enjoy my dinner here, I have to say I am on the side of restaurant goers who think there is really too much hype about Carbone. After months of periodically checking Resy to see if reservations were available, we were finally about to snag one for dinner at the less than optimal time of 9:45pm on a Tuesday. The table wasn't ready when we arrived, so we sat at the bar and ordered a drink. My old fashioned was expertly made and I was surprised at how affordable the cocktails were at $18...not bad for Miami Beach. The ambiance: While enjoying my cocktail, I got to take in the plush surroundings and the interesting mix of people who were here. The ambiance is all velvet and leather and chandeliers with romantic lighting, but not steakhouse dim, because the people here want to see and be seen. For 9:45 pm, the place was full of people. A lot of older men, presumably with money, with a scantily clad woman that would've been a cosmetic surgeon's dream, hanging onto their arm made up a good percentage of the crowd when I scanned the room. I'm sure there might have been a celebrity or two there as well, but I'm not good at spotting them. The food: Honestly, I enjoyed the beginning and end more than the actual main course. You get a complimentary bread basket, charcuterie meats/cheese and some pickled cauliflower which were all delicious and filling if you weren't careful. We ordered the octopus appetizer, lobster ravioli and the highly anticipated spicy rigatoni but both entrees fell short of the mark. The rigatoni wasn't spicy at all and really nothing to write home about. The lobster ravioli was too rich for my taste, so I ended up boxing it to-go, but I will say there was plenty of lobster in it. I thought the octopus app was prepared well with the picked red peppers complementing the charred octopus flavor. I REALLY enjoyed the chocolate hazelnut cake for dessert and I'm glad I saved room for it because it made up for the underwhelming rigatoni. The service: very attentive staff all around, but I don't remember catching my waiter's name. 5 stars for ambiance, service, and drinks, 4 for food. As the night got later, the playlist became very hip hop forward instead of the 1960s jazz/soul that I heard when I first arrived, which I didn't mind, but felt like it was taking away from the classiness of the place. All this to say, I'm thankful for experiencing a dinner at Carbone, but I am crossing this off my bucket list and not looking back.

Carbone is a high end Italian restaurant that hails from New York and finds another home in Miami Beach. I hate to start this way, yet a major miss for me is the challenge to actually get a reservation. It's a little gimmicky and clearly tactical to create hype. It's obviously worked for them, but in practicality: annoying. I'll spare the details, but good luck. The location on the beach is nice. It's south, close to south point park. Calmer traffic and pedestrian wise from just a handful of blocks north. Rolling up to valet can be congested, but they are friendly when you speak with them and they promptly said $20 cash upon getting your car. They did a quick job to wick cars away. Carbone has a beautiful old time New York Italian vibe inside. You can tell this is where a lot of trend setters like to settle and be seen. The bar is beautiful, but logistically a little prone to traffic jams. It's right by the entrance where people are trying to not only get drinks, but pass for bathroom access, check in, and walk for indoor table seating. We were seated in the beautiful, slightly more quiet patio. I preferred the patio seating tonight, but can see why people clump up at the well decorated, intimate and cozy spaces inside. Tables outside were well spaced out. Looking around not always back to back full, but mostly turned over. I did like that once you're in - they don't rush or fuss you at all. In fact quite the opposite: they want you to dine and enjoy the night with leisure. I liked that a lot. On that note, all the staff from the waiter, busboy and wine sommelier: outstanding. Exceptionally trained and very friendly. They have some complimentary bread, salami, and picked cauliflower starters from the kitchen to kick your experience off. I love it when nice places greet you this way. The bread basket is nice. All our food was good. Some were quite reasonable with pricing and others over the top. The food here is fresh and well seasoned. I particularly enjoyed the sashimi cold selections, lobster ravioli, Dover sole and shrimp dishes. The music selection up to about 10:30pm was a selection of old classics and then some more modern beats are featured after. The former suited the old Italian vibe beautifully. It wasn't over the too loud on the patio, but a little louder than I expected. The whole place is very homey and welcoming, even reminiscent of another time (think classic old Italian movie settings). They were open about being out of two starters and we discovered they were out of Branzino later when ordering. The fish had a substitute, which was snapper tonight, which wasn't bad, just not as good as the dover sole (higher end at $95 with a nice table preparation). The shrimps were about $24 per piece if I recall correctly but they were the biggest shrimp (and more importantly: tasteful) that I ever had. While I enjoyed the special truffle fettuccine, I didn't think it warranted the $75 price tag. The wine selection was robust and quality. The hazelnut chocolate dessert was nice, but not a must do or anything. The ice cream came with edible gold. Fancyyy. They brought out some Italian cookies to end and I summed up everything with a nice warm mint tea. The check was maybe one of the more expensive I've had in a while. The food was good, yet the service and vibe is a bar above the rest. In short, this is a nice high end Italian restaurant. If you can't score a seat, there are a lot of other amazing Italian spots in the area. I would return, but outside of a special request or occasion, I wouldn't rush to go through that reservation system again. Happy eating!

Can be difficult to get reservations but my group is friends with a music executive who is a regular and has a standing table.Started off with cocktails indoors while we waited for a few members of our party to arrive before heading to our outdoor table on the patio on a glorious late February Miami Beach evening. Because of my friend's influence we were seated at an extra large table and permitted to smoke cigars after our delicious meal.The bread basket, including garlic and pizza bread, was great. For appetizers we had tuna calabrese, meatballs, beets Siciliana and Caesar salad. Shared a number of entrees: veal parmesan, dover piccata, spicy rigatoni, and lamb chops. All outstanding. Washed the food down with a 2011 bottle of Amarone. Capped off the meal with carrot cake and Italian rainbow cookies. Dining with a large group meant we were the beneficiaries of sampling more dishes than the average 2-4 party group gets an opportunity to. While the Veal Parmesan and spicy rigatoni are the most popular items my personal favorites that stood out more were the tuna calabrese and lamb chops. My only suggestion would be to consider bringing your own bottle of wine and paying the corkage fee. The least expensive bottle of Amarone started at $400 and went up to $5000. The bottle we had was good, though I have had equally good--or better--Amarone for less than 1/2 the cost we were charged at other fine dining establishments.Worth the hype and the wait.

Great Meal with Friends at Carbone
Solid meal all around at this classy restaurant.
Reservations are difficult to come by at this place but my group is friends with a record label executive who is a regular here and has clout. 8 of us in total ate here on a Saturday night and had a wonderful experience.
We started off with cocktails indoors before our entire party arrived and then proceeded to an outdoor table on a glorious evening.
The meal was fit for a king and started off with bread—the garlic and pizza bread was outstanding. Enjoyed a Caesar salad and tuna caprese for the appetizers. Split a number of other items including meatballs, dover piccata, veal parmesan, and lamb chops. Every item was phenomenal. Washed the food down with an 11 year old bottle of Amarone and finished the meal off with carrot cake and Italian rainbow cookies.
Great meal with great company all around and will definitely return.

I've been to the NY and Miami location and honestly find them to be pretty similar (NY is slightly better). The free small bites are always a great way to start the night. One of my favorite bread baskets! We went with the montepulciano d'abruzzo wine and I recommend that to anyone having a nice Italian meal. We sat outdoors which was nice but I'd much rather recommend sitting indoors if you can get a table. The outdoors just didn't give me the carbone feel I wanted. I quickly learned that although the caesar salad is good and the presentation is cool but I wouldn't get it again because of the lack of food compared to the price. We also got the eggplant and zucchini scapece which I wouldn't recommend either. The veal parm and spicy rigatoni were hits as always! Also one of my favorite most slept on bites are the meatballs!! The carrot cake was probably some of the best I've ever had also. I can't wait to try the chocolate cake next time!

Everything on the menu is family style so go with a large group so you can try a little bit if everything. The Mozzarella and prosciutto appetizer is amazing. Mozzarella is a minute old. You have to get the Spicy Rigatoni as well. The Tortellini Al Ragu was awesome as well. The entrees weren't as outstanding as everything else, but still great. The Chocolate Hazelnut Cake for dessert was unreal. Very hard to get a reservation through but use the Resy App and set up notifications.

I waited for weeks as our reservation for Carbone and it definitely lives up to the hype. The vibe of the restaurant was very elegant. Our waitress was very attentive and gave great recommendations. The bread and fresh cheese that was provided was delicious. I would definitely return to this restaurant in the future.

I visited South Beach for my birthday in September 21 and this was the first place I made a reservation at online about a 2 weeks ahead of time.I was wondering why they only had a 10:30pm available on a Monday now I know how lucky I actually was to get my reservation.As soon as we arrived in Miami we checked into The Edition and then drove straight to the restaurant and into a hectic valet area.In my opinion the Caesar alla ZZ was the best part of the whole meal.Our waiter was great.We also got the Lobster Ravioli and Veal Parmesan.I liked the ravioli better than the veal.The restaurant was packed we had to wait at the bar coming in for our table reservation.It was definitely a cool way to start our 8 days in Miami!

We visited on a Tuesday evening and the restaurant was full and their many people waiting to be seated because this is one of the most popular restaurants on south beach. Inside the decorated tastefully provided an intimate ambiance. Our waiter Jake was attentive, knowledgeable and he would check in to make sure that everything was as we expected. He went out of his way to make our evening special, if you can ask for him. Food was amazing and the portions are large enough to share so that you can sample a larger variety of the dishes that they offer. Some of the excellent dishes that we had was the beef carpaccio, octopus, their famous and delicious meat balls, spicy rigatoni, jumbo shrimp scampi and the veal chop amazing. We ended our dinner with Jake preparing table side banana foster WOW. This is an awesome place to celebrate an special occasion. Thank you Carbone and Jake.
This is a restaurant we wanted to try for a while but it is pretty difficult to get in without advanced reservations. All in all we really enjoyed the food! Thought the taste was great and the ambiance was awesome as well. It’s always good to eat a restaurant in South Beach that is actually worth the money and you leave satisfied. All in all really enjoyed the food and experience. I will return. Wish the plates were just a tad bit larger since they are considered shareable.
Lovely looking restaurant but !! We entered the restaurant and there were 3 ladies at the check in desk, we have our name and the time of our reservation and were told to get a drink at the bar and they would coke and get us. After 45 minutes we went back to the check in desk and were told they would get us, but no idea of when. 30 minutes later having waited over an hour past our reservation time we went back and were told they were very busy and running behind schedule. I then spoke with the so called manager who gave the impression he did not really care and said the same that they were very busy and not even an apology. 30 minutes later I went to see him again having now waited nearly 2 hours for our table and he told me again they were busy but we would be the next people to get a table.
Eventually we were given a table but no apologies and when i mentioned to the manager that part of his job was to mange and that they should not over book the tables, he told me that he was an excellent manager and it was none of my business how over booed he wanted the restaurant to be as more people made it look more popular.
When we eventually got our food it was bland, pasta over cooked and veal was dry

This is located on the swanky South Beach road. We vegetarian food eaters had a limited choice on the menu but we left with full stomachs and satiated desires! The quality of the food was superb! The pasta was one of the best we have ever had! Thanks to Jhonny for his wonderful service!
